looks so yummy i will attempt a pot tonight i recently moved from Adelaide to Port Lincoln and theirs a wee town a bit up the way called Cock a leekie what a HOOT a lot of Scots setled here in early days of South Australia mabey yin O they called it that

Hello lassy. I came looking for this soup after it was mentioned in one of the Outlander books. So I came to KZbin in search of wether it was a real Scottish thing or was just written for the book. So is your soup hear close to how it would have been done in the late 17th early 18th century in the highlands?? I think I'm going to try this as you made it on my next pay check. Thanks in advance. And in case you somehow never read Outlander.... I cannot recommend the book series enough.

Hello I love Outlander I am a big fan! lol! This recipe is a really old Scottish recipe as are most of my recipes and originally they would have used barley I believe instead of the modern day use of rice. I hope this helps, if you need any more help let me know, take care, Angie xx

Nay lass, the prunes are not optional! The prunes are a binder that bring the elements of the soup together so that the flavors and textures become a harmonious whole.

There are also a lot of older recipes that don't contain any prunes at all and some are even made with oatmeal instead of rice. I haven't tried it with oatmeal but I bet its delicious! :-)

@@theweelarder4020 Yours is one of the best traditional recipes I've found, thank you. I was skeptical about the prunes myself but they don't do what one would think. They give the soup a silky texture (by releasing pectin I think) and a bit of sweetness but otherwise you won't notice them. Happy Burns Night.

Original cock-a-leekie was a standard in our house the day after we had a chicken, stock made with bones and skeleton. Meat that came off went into the soup which was quite clear....... the prunes were to soak up extra fat not necessarily to be eaten......no turkey for Christmas in those days. Making use of the whole chicken. I loved the soup.

My wife gave me the book The Cookery Of England by Elisabeth Ayrton. This recipe caught my eye and I am making it next weekend. Thanks for sharing your video, now I feel confident in making it. Yours Looks delicious! I like how you added honey and then the chopped chicken into the bowl before serving. Different from the book recipe, but real nice too. Excellent video!

I always make this soup for my restaurant's Rabbie Burns event. I've always wondered how true to the traditional recipe it was and it looks like you've done your homework. Like that you've made your own stock here. Finishing the chicken in the oven is a great idea. Love the rustic appeal of your soup, looks wonderful. Thanks! :-) I've done a lot of reading into traditional Scottish cooking, this one is pretty close but some recipes also add in prunes too, I haven't tried it with that yet but it sounds interesting! :-) I've also added some grated carrot and that worked nice too but the older recipes don't have it but it works :-) Do you use prunes in your resturant recipe? I'm hoping to make this with a cockeral soon too! ;-)

Hello Hannah, your right traditionally in the older Scottish recipes I have seen barley being used but in the more modern day recipes they use rice :-) I would like to try it with barley some day I'm sure it would be delicious! Enjoy, Angie :-) x

Thanks for this beautiful recipe. I am doing this just now. I am asking if the whole chicken means not cut in pieces, because if cut in pieces when it's boiling in the pan it will add more flavour to the stock. I will tray some of the others soups and dishes in your videos. Saludos from Spain!!!

This looks lovely! Leeks seem to be a little hard to come by at times here. I’ll have to try again to find them, because this looks delicious! I’ll make it with the rice the first time, but I’m on a barley kick now, so I might try it with barley for a second try.

Hello Merindy, Yes barley would work in this soup also instead of rice and would make a lovely Scottish addition to this dish. The leeks are definitely worth sourcing they are super delicious and buttery in this recipe :-) I hope you enjoy it x

@@theweelarder4020 I found the leeks! I made this, and was a little apprehensive that the kids wouldn’t like it. I forgot to add part of the second half of the leeks at the end, but the kids loved it, so I think the full cooked leeks went over better than partially cooked ones would. I had Rosemary, thyme, and lemongrass for my herbs, and a couple bay leafs. The kids thanked me for the meal and said they loved it. I think this may come into our rotation more frequently. I was really impressed with how well the roasting of the chicken after helped to make it less soggy and gave it extra flavor. Thanks again for another great recipe.
