Nutmeg and cinnamon is in most November dishes, but to be fair, I add a bit of chili pepper, anise, and clove to my November blends and more chocolate cinnamon, sugar and chili blends to the december blends and use clove, lemon and anise for my “non-chocolate” bases. Texas, New Mexico and Louisiana inform my cooking though. If your oven is weak - try a “stone” like pizza and foil to help conduct heat.
