This crunchy and sweet coconut and ginger chips will be great for snack or as sprinkles on your cakes.
all we need;
1. Dry coconut
2. Ginger
3. spices(I used cinnamon and nutmeg)
4. sugar
5. water
To make:
1. Break & Dehusk the coconut
2. wash and grate it
3. wash and grate Ginger
4. add the ginger and spices to the coconut and mix
5. pour the water and sugar into your saucepan and set on medium to low heat.
6. stir until sugar dissolves and water thickens a bit
7. add the coconut and stir continually. (it will feel thick and sticky but just keep stirring)
8. turn the heat to low when it's beginning to separate and turn golden.
9. you'll know it's ready when it feels dryer, gritty and golden brown.
10. pour out and allow it to cool (it will become firmer and crunchier when cool)
Store in an air-tight bag or container.
