Tried out this recipe without the preservative. As I am guessing I will probably eat it a little faster. I also paused for a second when a preservative was suggested as an option as sugar is a preservative itself. I appreciate that you showed a difference between greater & lesser amounts of sugar to give us a gauge on what we would want to do. It is a very comprehensive video with clear explanations on why certain actions are taken. I did however notice the recipe in the description wasn't consistent with the recipe for the video.

Thank you for this recipe. Have tried many recipes ... a few have been laborious and one that didn't turn out at all as the video showed - even after several tries. This one seems easiest ... but wow. 2 to 2.5 days from start to finish. There has to be a recipe that doesn't take so long.

Hi from Canada! I’m doing this recipe a little different. My Vietnamese fiancé loves Chinese red salty ginger candies, I cannot find a recipe anywhere so I’m going to sub the sugar coating with fine salt. Only going to try a couple pieces. Hope it works! Otherwise sweet ginger it is!

Recipe for 2 lbs. of Fresh Young Ginger root * Wash raw Ginger first. * Remove bark with edge of paring knife * When barb is removed Ginger is rewashed, then Cut into Length wise 1/3rd of inch thick; (that is just under 1 centimeter); note: ginger will shrink 50%; * Boil in water for 15 mins, reduce heat and simmer with lid, for 5 more minutes. This to kill organisms such as mold, yeas, & bacteria which can cause spoilage. ** add this at time of boiling: Sugar 3 cups for 2 lbs. of Ginder, 1 1/2 cups of Sugar per Pound of Ginger. *** Boil in 22 oz. of Water, or how much it takes to cover the Ginger Root Slices. * For Flavoring add 3 Tbsps. of White Vinegar & 1 teaspoons of Salt. Mix it well. * Next: Macerate the ginger slices in the Mixture for 24 hours. at Room Temperature. Be sure to put lid on your pot as you allow this ginger to soak overnight in the sugar mixture liquid. ** you can go up to 48 hrs. it you keep them refrigerated. * During the Macerate process, the liquid will be drawn out and be replaced with the sugar. As a result, the ginger will be softer and more flavorful. * Now after the 24 or 48 hrs. soak, then drain off the sugar syrup from the ginger in a colander. Note: If you didn't use the Camden tablet or preservative, then this syrup has a lot of flavors and it's great in cocktails and Many Recipes that call for Ginger. * If preservative the discard it. * Clean wire racks and dry so that the ginger slices can be dried. Leave on the cupboard, they will be ready in 24 hrs. Notice the ginger will gradually shrink while drying, ** you will know when they are ready bc they will have shrunk by about 50%. * Properly dried ginger will be translucent and slightly elastic when it's torn apart. Finally, Roll them in Pure Cane sugar or Confectioners' sugar for a sparkly look. ** not only are these good for snacks but they can quickly be used to make Ginger Tea with them. Just steep a few slices in a cup of hot water, and there you have it.! ** Preserved ginger can be stored in an Airtight container for up to 12 months. ***But in Refrigerator, they will stay good for 2-3 years. Note: a personal Modification I made: Add the Juice of one Medium Lemon, then remove the seeds and meat of the lemon with paring knife, then slice zest or lemon skin into thin strips then add to the water, during the cooking period. Be sure to wash the lemon well before you start.
