I made Fish and chips for lunch today. I used Walleye we cought on a fishing charter on Lake Erie. I used a Mandolin to make Waffle Fries and I made a Beer Batter for the fish. Spargos Kitchen needs to be a KZbin Channel. Thanks for all the great content and stay safe on the water.

GREAT Lakes fish n chips...sounds great! Last time I had fish n chips in Canada, they used a fish called Orange Roughy I think, around 13 years ago.. I was nowhere the Great Lakes.

- Oh no we do have a very loyal group of trolls who subscribe simply to dislike the videos. Every video we make regardless of subject has around 5-8 dislike within the first couple of hours. Rival channel owners who are petty and jealous thats all it is. 😊

Nice cook up!! My wife who was brought up in bolton calls the crispy bits scraps. I grew up in the south and never heard of people eating the left over bits of batter so don’t have a name for them. But where we live in Brazil they would mix the scraps with sugar and call it bolo de chuva which means rain cake!!! And it’s very good!!

That looks great. Was at RAF Lakenheath for a short time in the 80's and managed to visit a few pubs in the area that serviced a good fish and chips dinner. One of the things I miss of my time in the US AF.

That looked delicious John! Sitting here feeling envious haha. The best fish and chips I had was from your home town in Whitby a few years ago, we still talk about them at home. The only thing I would have added to that meal would be mushy peas :) When I was younger, I was always the one sent out by my Mum to the chip shop for a chippy tea every Friday meal time wrapped in newspaper. My Uncle had a chipy and we called the small batted bits 'scrapings', he also used to do potato scallops which were something else. Something Jim could try with the extra batter :) Great memories! :)

I had to travel over 20 miles (Leighton Buzzard) to get a decent battered cod, not any more though thanks to this video I can now try and do it from home. Note I only mentioned battered cod because where ever I've bought chips from a chip shop they are always disappointing. There is now no excuse for me not to give this a go from home. Spargo's Kitchen is a great addition to the Fish Locker collection of videos. The batter looked to die for as did the chips and sauces. This channel is a real family affair that I never tire of, James naming Tartar Sause as T Rex sauce may catch on. Thanks for posting.

Looks like some great fish and chips, if you can handle a little bit of oil spitting at your hands it's also good to float the fish with the batter in the oil before dropping to prevent sticking.

Good video John, A little tip, in the bottom of the frying basket get hold of a small sheet of stainless steel, cut to size & let it rest in the bottom, no need to shake about it will not stick. My grand kids always ask when visiting for grandads chips as once my daughters did. Lightly coat eack portion of chips with the batter mix & half fry, after about 30 ses in oil with a spatula separate the clump so as not to let them stick together, just like your video cook about 70% ready for second fry. Coor thats my Friday evening meal. Bon appetite.

@@TheFishLocker A good friend who had a fish & chip shop in Truro back in the 80's a former Head chef for Cunard QE 2showed me that by taking a small amount of batter & rolling the chips to coat them then drop into the oil, shake them about to separate them, the end result is really crunchy chips every time, I notice you like squeezems, must appeal to you especially.. Always 'Scraps' or 'Scrapings' in Durham as a child. Became 'Batter Bits' when we moved down to Nottinghamshire. But , staying on theme, that fish was a proper bobby dazzler of a result . Good battered fish always has been , and always will be one of my absolute favourites.

Batter looks perfect, thin and crispy. Hard to find that in a chip shop these days, it's usually thick and stretchy.

Great video that cod look quite nice and never been one for eating cod always like Pollock waiting or collie can't beat scraps be from East Yorkshire we always have scraps with our fish and chips keep up the great work and stay safe

@@TheFishLocker yes definitely be from Yorkshire we love our scraps and our patties I once went up north and they didn't know what patties where are scraps can't beat homemade fish and chips fish and chips in Whitby are really nice tightlines mate

That was some nice cods and pollack, nice to see some fish I know we have in our waters lol. Cod is just sooo good to cook up, so white and juicy. Spargos Kitchen is just a speedster in the kitchen as we call it here :D Those fish and chips look just amazing, we dont do that kind of cooking here, most pan frying. But I´d like a really good fish and chips dinner :D Hope you all are well, have a good on mate.

@@TheFishLocker Aw don't! Wifey rushed to Hospital Weds night - Pancreatitis apparently though they weren't sure. Home again now and getting better but Docs reckoned Home made chips caused it as shes type 2 diabetic? Ban on fried food now.

T-Rex sauce!! YESSS!!! Haha! I also make my own "T-rex" sauce! Maybe I'm too cheap to buy it, I don't know, and I love the gherkins in there too. If I don't have any, I just use a little relish. A little splash of lemon juice in it ,too if you like! Do you ever use any malt vinegar on the battered fish? For us, that's a treat only in restaurants! Ok, now I'm hungry! HA! Thanks for another great video!!
