Mengenai sensory experience yang berbeda pada temperatur yang berbeda, sebenernya bukan karena flavour compunds dari kopinya yang berubah, tapi lebih karena lidah kita menangkap rasa yang berbeda ketika temperaturnya berubah. Ada flavour compunds yang dapat ditangkap secara lebih optimal di suhu yg lebih tinggi dibanding suhu lebih rendah. Makanya ada sebagian orang yang kalau makan harus anget2, kalo udah dingin jadi kurang excited lagi. Tapi tentunya kalau terlalu panas juga lidah kita bisa jadi apriori, jadi memang ada sweet spot nya.

I believe the thing that opens & closes the valve in the Hario Switch is simply called a “switch”. Hence it’s named.. Hario Switch lol. Like when you turn a lamp on and off using a switch. Haha

I rinse a handful of filters the day before and let them dry out in the sun, they dry pretty fast and it gets rid of any paper notes

Hi, so use lower temp for natural and higher temp for washed? Also, finer for washed coarser for natural. Is this a rule of thumb?

It’s a pretty good starting point… start with a standard recipe, for example 88c for natural, 92c for washed, then taste the coffee and adjust accordingly- mj

@@SSGCoffeeChannel thanks i usually grind 28 on comandante for my naturals. i also use higher ratio of 20g to 180ml. skipping out or reducing the final pulse as i feel it doesnt add much.

From my experience, this theory holds true! Some Natural coffee has a bitter after taste when brewed with over 91 degree celcius, and it holds on the grind size as well. One other HUGE thing, which I always advocate for is water. Good water would extract the coffee easier. I used to only use Aqua, and it would require higher water temperature to extract washed coffee up to 96 degree. But now with Amidis + Third wave water, 92 degree is enough!

Biasa kalau terlalu tinggi, turun air nya jadi terlalu keras dan kalau ruangan nya sangat dingin, suhu air ada resiko turun

it's very extreme. one person wastes a lot of room temperature water to rinse and another person doesn't rinse at all. I think they are both wrong
