Watching at the 20:00 area when they discuss why processing by hand is preferable to automation, it reminded me of the Korean "sonmat" which literally means "hand taste". Which is basically the irreplicable quality that hand-making something lends to the final dish or product. So awesome to see the same care being shown by young Jose Jijon there.
