Al Cheng - Hong Kong | Home Coffee Brewing with April #48

This week, we’re bringing you the latest video from a series that we call Home Coffee Brewing with April. This episode was filmed in Hong Kong very recently as we are currently hosting the latest edition of the April Brewers Cup. We had the opportunity to meet up with Al Cheng and explore his perspective on coffee brewing together.
We believe that innovation in coffee brewing starts at home, and that some of the most special and meaningful interactions with coffee can take place within your own kitchen.
As we are frequently travelling visiting our international partners, we decided to introduce this format as a way to interact with you on a different level whilst maintaining the frequency of our videos.
In this video, Al is brewing a washed Gesha from Colombia roasted by local roasters Oma. He uses an April Plastic Dripper combined with newly released wave filters from Origami. He is grinding using a hand grinder from Kinu, of which he is an ambassador and distributor, and thankfully he is able to give great insight into the benefits of the differing models in relation to filter brewing. He uses a Fellow Electric Gooseneck Kettle combined with local tap water and puts all of this together using scales from Ultrakoki.

The Kinu is an interesting grinder, certainly a very different flavor profile compared to the Comandante and ZP6. On another note, will the Hybrid April brewer be released in a version without plastic parts that get in direct contact with the brew water? Bit specific I know, but really trying to limit plastic exposure lately.. Anyways, thanks in advance!

Can you share with us the model of the grinders, coffees, etc?

We are using the Kinu Simplicity here. Coffees brewed were Panama Tierra Blanca washed geisha and Cerro Azul honey geisha, both roasted by Oma Coffee Roasters in HK.
