There's and actual reason why he stir with the spoon handle instead of the spoon head, Go to the kitchen and fill a glass of water until full and stir fast with the head of the spoon . As u notice that alot of water is spilling. If u try with the spoon handle and did the exact same thing like just now and there's not much water spill. Conclusion: This guy use the handle of the spoon to stir is to prevent waste from spilling alot. So the customers can enjoy the chocolate more

This isn’t a high level restaurant though It’s outside in the heat where you sweat In restaurants you are washing your hands all the time depending on what you touch... Your example is quite ridiculous I have worked in restaurants Big big difference between touching with clean hands in a controlled environment where there ain’t much to touch versus outside where you handle money and food and put your hands on table etc then touch ice for no reason when scoops exists and longer mixing spoons exists There’s no immediate hand washing station and clearly non wiping towel But go off and excuse it all with incredible logic and reasoning that you have And yes I know in restaurant you sweat too. But the chances of unnecessary touching are low in comparison. I mean cmon... scooping ice with hands? Drinks don’t need touching that way. Or any cold food... at least hot food is hot enough for most germs to not survive where chef/cook slightly touches for garnish and adjustment Sheesh
