I’ve been making and eating this soup for past three weeks /. Polish version. It’s so easy and unbelievably nutritious. I make my own kefir from raw milk ( luckily I live in PA - it’s not illegal to sell and buy raw milk here ). Thanks for posting and spreading the joy of cooking. 😍

This is great idea for hot summer days. I might try this one. I do make Gaspazho and cucumber cold soups. Suppose Okroshka is russian version of Italian Gaspazho. Thank you for sharing. Cheers

My hubby always get's excited when he comes home to my pink fingers! lol He loves his beets. I've learned to love them too. Though, I do grow yellow and striped ones now as well.

Yeah it's true but back when your mom made it you didn't have air conditioned houses. And truly if we ate things like this we wouldn't have so many health issues today because people probably stop and get fast food when it's hot they don't feel like cooking at home and that's all too often.
