Try reading the instructions! I have the same grill and the bowl around the burner is supposed to be filled with water(note the max mark on the side) to catch the grease that falls out of what you are cooking. Then it just dumps out when you are done.

Love mine! Put water to fill line makes easy clean! Yes I always put oil on the grill before use.

If you read the instructions the user is supposed to add a small amount of water around the burner area then put grill top on.

I've had this same party grill product by Coleman for over ten years. I believe I paid $50 at Target. I wasnt aware it was still available. Mine included a stove grate, which you didn't show in the video. I actually use it only for the stove feature; its tall and stable, which makes it convenient on a picnic table or bench. The grill feature is messy and hard to clean. The uneven grill heat pattern makes achieving good results on meat very difficult. I agree that the gas valve is very finicky; hard to adjust to a low setting without turning off the flame.

You could also use aluminum foil over top and poke holes for the heat to escape, been doing that on a charcoal grill for years 🤷‍♂️
