I love pot roast, but don’t like it the next day because I think it dries out too much, so since I live alone, I started cutting up the roast in a few pieces, and put it in freezer bags. When I’m ready to cook a bit of roast I put it in a pot with water and some Better Than Bullion, beef flavor, when the meat is done (takes 20-25 minutes) I make a cornstarch slurry, sometimes I chop up a potato to cook with the roast, but sometimes I make mashed potatoes, but it’s always good, and I’m glad I decided to cut up my roast.

Tammy, so good to see you apparently feeling so much better! Hope you're not pushing yourself too hard. Have had to be away for a bit, putting up the last tomatoes, got 7 pints of ketchup and about 5 of pasta sauce, hoping to dry the last ones and then put some green tomato chutney. If it's okay, will be sending you some recipes soon from SW Missouri that have done awfully well for me. You & Chris take care and be good to each other; love from MO. BTW, this beef tips looks, as my folks said, totally larrupin'!

That looks absolutely delicious!! I’m thinking any type cut of beef would do. Like chuck or round since it’s braised. We call creamed potatoes mashed potatoes up here in Ohio. Today I made some with a recipe that called for 1/2 cup of cream and one package of the Boursin herb cheese you get at the store. It was so good with my strip steak I always smother with A1 lol. Thanks for another great recipe.
