USC was my dream school until I got into Pomona as a transfer student and realized it just made more sense in every way. Glad you got Rice as its a wonderful school in a wonderful place!

If you're out-of-state for UCLA and your parents aren't filthy rich, then you need to decline, unless you can get significant federal aid.

For the most competitive colleges, you're going to want straight A's. When it comes to extracurriculars, you want to be the best in everything you do. Founder of nonprofit > volunteer at nonprofit. I know those are not easy things to achieve, but if you strive to be the best, plenty of schools will want you, even if you only get halfway to your goals.
