OMG I was thinking YES YES YES when Matteo was explaining how most American espresso tastes burnt & is not done correctly. I have a very sensitive palate so I taste the subtle nuances of flavor in various foods that others often don't. I get that burnt taste too often or a burnt caramel taste at coffee shops. So nice to hear someone who gets it. Have loved Matteo for years now. He's just naturally hilarious. His pasta cooking show on his youtube channel is hysterical.

Not because I'm Italian, and biased, Matteo is very handsome, and cute at the same time, extremely hilarious, sarcastic, well-mannered when needed, just plain smart, a talented singer and the recipe for "Matteo's Pasta Alla Mamma" is the best dish ever (next to my Nonna's ravioli). I love you, Bello Matteo!!

I love Margherita Pizza. It is my fav. But let’s face reality. The idea of bread cooked with food on top goes back to many nations and thousands of years. My neighborhood? The “Pizza” is mostly Greek. The US version was not made up by ignorant Americans. It was developed by immigrants using the ingredients found here. Oh, and telling someone the “proper” way to eat a food? Seriously?
