As part of paris flow designer has delete multiple and update multiple API integrated where we can create a flow to delete, update the tables. However can we add an option to choose to ignore audit and rollback which might not bloat sys_audit, audit delete , sys_rollback_sequence, context, and shadow tables ?

I'm not aware of such options. The Flow Steps use the same API as GlideRecord's deleteMultiple() and updateMultiple(). If you would like to see some enhancements, I recommend submitting it/them to the Idea Portal on the community (community.servicenow.com). Thanks.
