Hi. How well does T-1 perform with European style knives with a full bolster? Many machines seem to leave the last cm untouched, which is very annoying.

I have the T-1 and love it. You can get right up to the guard on knives pretty effectively.

Love my T-1. Took a long time (and the purchase of other cheaper knife sharpeners) before I decided to spend the money. Glad I did. Amazingly sharp knives and super easy to use. Most difficult part is knowing which angle to grind at. I will have sharp knives from here on out and hope to have this thing for many many years to come. Yes, I did purchase from Sharpening Supplies and they communicated well throughout the process of my order to delivery. Oh, almost forgot. I have made some blades look pretty gnarly with over sharpening one area of a blade over another (WorkSharp belt sharpener), you will not do that with the T-1.

I have a couple of Japanese cleavers in my set with 3" high blades. I assume you cant sharpen them on these units. Any advice?

There’s a lot to unpack here. As a busy kitchen professional I am looking for something that will sharpen my knives to a high degree of sharpness. I generally have Japanese knives and the conventional wisdom is that they require hand sharpening. Which is funny because when you look at images of the knives being sharpened in the factory they’re not be done by hand with a whetstone. If the t1 had interchangeable stones there would be little reason to get the t2 since it doesn’t allow the sharpening of larger/taller blades. I’ve never sharpened with a dry method. Seems unnatural like using a bench grinder or something less nimble.

Why doesn’t it allow larger, taller blades? They both have the same jig. I’m asking in case I missed something, I like to use cleavers and would consider those larger and taller.

@@cfuzzkennedyI meant that the larger size of the t2 doesn’t really offer that much more of an advantage other than being heavier duty since neither can sharpen a cleaver or taller knife. Sharpening a rotary blade isn’t that useful because some meat slicers have built in sharpeners and I don’t find that I need to sharpen a rotary blade very often. I wonder why they did away with the water reservoir. I’m guessing because of the lower rpms don’t heat the blades that much. Looks like a nice tool tho

Thinking about getting into sharpening as a sideline.....it would seem from your video that the T1 would not be good as a professional sharpening system long term. Would the T2 fit the bill if I wanted to sharpen knives for $? Or, should I bite the bullet and buy the T-8 if I want to sharpen things to make money? (just found your channel by the way and I appreciate you brother.)

The T-1 is designed for home users, so out of the T-1 vs the T-2, the T-2 would be much better as a professional machine. The T-8 however gives you a great deal more versatility, 6 different grinding wheels, jigs for any occasion. But it is a larger investment. I have never used a Tormek (and not a professional, just a home enthusiast using wet stones), they have a wide selection of jigs and accessories for almost everything. If I were to sharpen knives for $, I would look into the jigs that I could use and see which machine fits. Also look at used Tormek's. The T2 v/s T8 is only a matter of few 100 dollars (unless I am wrong). Being able to sharpen more tools will give you a wider addressable market.

I you wanna go pro, by a T4 or better T8. The T1 is very limited and the T2 is just a fancy T1🙂 definitely NOT for pro use. Succes! (btw, I have the T4 and three stones and two honing wheels. One of felt and one of leather with a little Gunny Juice 1 micron. I make a modest amount of extra income with it. 30 years experience.)

I have a 20 year old predecessor of the T8 and I love it for my workshop tools (planer blades and chisels). However for kitchen knifes I´m now considering a T2, since it seems to offer much higher guidance precision for the knifes. A slightly wrong angular movement on the T8 and the edge of the stone will have produced a kind of notch in the cutting edge, requiring lengthy and frustrating additional work. For my "T8" I have also the drill sharpening kit, with which I am quite happy. I it useful for the larger, more expensive drills.

Actually, both since I'm trying to decide between the two. Having the ability for the ultra fine grit is lending me towards the t2, but I'm really not sure if that is necessary for my applications. A mixture of kitchen knives, European and Japanese

You should have mentioned that the plastic guide for the "small" chef's knives can be removed from both the T1 and the T2 and that Chinese chef's knives can then also be sharpened with them. kzbin.info/www/bejne/nZm7n2eXi8ySeKM
