Thank you for the super informative videos to help me finally make my decision on a prosumer espresso machine! It's a major investment so I've put several hours into watching a lot of your videos... some multiple times! Now I can't wait for my Expobar Brewtus IV-R to come in! The only question I have is drainage out of the Expobar... You guys don't have any videos about drainage connections (not just from the machine, but connecting it to a sink) so I'd love to see a video like that! Thanks again for all the great help :-)

Hi i, Thanks for the question. The Brewtus IV is the only DB machine we carry (and that I'm aware of) with an HX section in the service boiler feeding the brew boiler. We regularly Scace all these machines - it's part of the bench prep before they ship. With PID, all the machines are very accurate in initial brew temps. We do see a difference occasionally in recovery time. The Expobar in general is faster. On the flip side pulling many shots rapidly may cause brew temp overshoot but it's minimal and one has to pull many shots in rapid succession to get there.

Hi Gail, Thanks for the question. The Rocket Mozzafiato is a good machine and very capable of making cafe quality drinks. Easy to use is a subjective judgement. At that level of machine you will have the capability of brewing and steaming simultaneously due to heat-exchange boiler. if you step down to a single boiler machine you cannot brew and steam simultaneously. If in the US it might be best if you spoke by phone with one of our coffee experts. Most are former baristas. They can more deeply assess your needs and set you up with the equipment that meets those and your budget. You can reach them at 585-924-7170. Marc

ECM Syncronika or Profitec 700? From watching several of your videos, both seem like solid, quality machines. Looking at the knobs vs levers, would the knobs allow one a finer control for steaming? Or do the spring loaded knobs tend to cause them to operate more like the levers? If you were to buy one of these two machines, which would you pick, and why?

Hi Dave, Thanks for the question. The Synchronika and Pro 700 are essentially identical internally - guessing you knew that :). Key differences are the knobs vs. levers, gauge placement and finishing details. The sprung valves are very close to levers in control of steaming power. They go from full closed to full open with a quarter turn so it's difficult to have precise control of steam release by turning the knob. But, you can control steaming power by adjusting the temperature and therefore the steam pressure in the boiler. Gauges are mounted up high on the face of the Synchronika so easier to see when using machine. For finish details, both are excellent but the Synchronika is a cut above with angled portailters, matching chromed accents on control levers and PF handles. Also has more detail in the group head which has a subtle taper and a more "designed" end to the E61 exhaust tube. Synchronika is very easy to open up. Personally I'd choose the Synchronika. I open a lot of machines up and the Synchronika is the easiest. I appreciate the finer details and especially the angled PFs which make tamping and locking in easier. You pay a bit more for all that but I can easily justify in my mind knowing I'll be looking at it and using for years to come. Hope that helps! Marc

Thank you Marc for this very clear and informative comparison! I own my ECM Synchronica, paired with the ECM V-Titan 64 grinder, for about 1 year now, and can't be happier! Learned a lot from the many videos from WLL, which helped making the purchasing decisions. I also adopted the WEMO switch in my setup, my machine is always ready in the morning. What I wasn't able to do is installing a direct water line due to physical constraints in my kitchen. In order to avoid descaling, I am using the BWT water pitcher filtering together with the Bestsave M Anti Scale Filter in the reservoir. Hope this will get me "close" to the plumed BWT filter performance. Any thoughts on this filtering combination? Maybe a comparison video between the plumed and reservoir+pitcher filter? It would really up the ease of use factor - especially since you have the wifi switch. With the BWT pitcher and anti scale filter in the reservoir I suspect you are fine. What I need to do is get out my test kits and see how the two setups affect TDS, alkalinity, pH, Ca and Mg levels with my source water.

Hi DP, Adding a timer is a life changing experience! So nice to have a machine all heated up and ready to go. You are right, machines with electronically activated power circuits usually don't work with power timers. But, all the machines in this video have mechanical power switches so works like a charm! As mentioned be sure the switch is rated to handle the current load of your machine.

Hi ff, Thanks for the question. In dual boilers one can set individual temps for the boilers. In PID HX machine you set boiler temp to get a desired brew temp. So depending on brew temp desired you are limited in adjustment to steam pressure - can run higher pressure in dual boiler machine without effecting brew temp. Marc

I am thinking about purchasing the Rocket R58 and I noticed that you recommended to pair it with the BWT Bestmax water filtration system. I looked up the BWT Bestmax Premium filter and one of the warnings on this filter was, "Not for use with machines that have components made from copper, galvanized, chromium-plated or nickel-plated material". The boiler in the Rocket R58 is copper and brass. Am I misunderstanding this or should I avoid this filter, even though it appears designed for espresso machines?

Hi, thanks for getting back to me. I included the link in the previous reply. Since then, I have done some more research on the BWT website and found what they may have been referring to. On the BWT website, www.bwt-group.com/en/Products/Pages/product.aspx?pid=FS22P01A00v(BWTGROUP)#product, (not sure why the link isn't working) I opened up the PDF manual and it states, "6.3 Material selection When selecting the material, remember that decarbonised water contains free carbonic acids. To prevent corrosion, BWT recommends that no components made from copper, galvanised, chromium-plated or nickel-plated materials are installed between the filter system and the appliance." That said, they also identify this filter to be suitable for espresso machines etc, which are pretty much made of copper pipes...Should I be concerned at all?

Hi, Thanks for providing the link. BWT definitely recommends the Bestmax Premium filter for espresso machines. So I agree the 6.3 section in the pdf manual is confusing! Perhaps the key phrase is " ...between the filter system and the appliance." They do not specify those materials are problematic in the appliance. I'm contacting BWT to get clarification and will update with their response.

Hi MS, Contacted BWT in regards to the free carbonic acids and risk of corrosion. Here is their clarification: "That warning is primarily for the original Bestmax filters, but they included it with the premium manual as well. The risk is that if you set it to blend setting 0 that the filter will run 100% of the water through the ion exchange. Calcium is replaced by hydrogen which lowers the Ph and makes the water more corrosive. In the manual, none of the blend settings they recommend will result in this occurring." Hope that helps! I had three clarifications: [1] I am inclined to buy the R58 cinquantotto vs. the ECM Synchronika but am wondering if the flow control that you are providing for ECM will make a difference to the coffee output? [2] I wanted to validate that the ~1.5 bar stream pressure in R58 vs. the ~2 bar pressure in ECM results in the same quality of frothing/steam though the ~2 bar could result in faster steaming [2]I ruled out Profitec 700 given its similar to ECM Synchronika and ECM has better external features. Hey Ajit, The flow control opens up new possibilities. Things like a very long low flow pre-infusion to tame brightnes in fressh from roast specialty coffees. Here's a video with 2 simple flow techniques that make a huge difference in extraction quality: kzbin.info/www/bejne/l160coKlbbuaa6M The extra steam pressure in the Synchronika or Pro 700 has a few benefits: Faster steaming, more vigorous roll in pitcher for finer milk texture and capacity to steam more milk before reduction in steam pressure. The Pro 700 and Synchronica are nearly identical internally in specs, components and construction. The difference is as you mention external finish quality. So yes, I am aligned. Hope that helps! Hi Hussain, You are welcome and thank you for the comment. You cannot do pre-infusion unless plumbed in. You can do pre-wetting of the coffee puck. Residual pressure in the boiler will push out a bit of water onto the coffee puck. It's not much maybe 30ml and there not much pressure behind it. Marc

Hi Genc, Thanks for the question. IMO no difference. Technically copper is better transferring/holding heat. But, copper boilers use thinner metal than stainless boilers so not much difference as a heat sink. Some manufacturers have told me they believe scale is less likely to occur in stainless. Hi Waleed, Thanks for the questions. The current ECM Synchronika has best in class steaming power with steam boiler running at about 2 bar max. R58 runs about 1.5 bar max. Making nicer microfoam is dependent on user technique but most prefer higher steam power for bets results. Hi M, Thanks for the suggestion. I will say there not a huge difference in noise in these machines. All have rotary pumps with very similar noise levels. Different story when you go to vibration pump machines which are a little noisier. If you want a silent machine go to a plumbed in manual lever machine. There are some which never run the pump! Marc

Hi YH, Thank you for the question. A few general advantages... temperature stability in heavy use. Recent HX machines with PID are very good and generally do not require cooling flush prior to brewing. HX machines without PID almost always require a cooling flush. The majority of DB machines are plumbable to waterline and have rotary pumps which are more robust than the vibration pumps found in many HX machines. Steaming and hot water output on DB machine has zero affect on brew temperatures. That's not always the case on HX machines. A few DB machines like the Profitec Pro 700 and ECM Synchronika can do line pressure pre-infusion when plumbed to a waterline. Not aware of any HX machines with that capability. Hope that helps. Hi ZS, Thanks for the question. At minimum I'd go with a Baratza Vario or Sette 270. The Vario has been considered the entry grinder into prosumer level grind quality for about a decade. Baratza considers their Sette 270 series grinders the best option for espresso based on usability. The Vario produces a slightly better grind in my opinion while the Sette 270s are easier to use. Another option is the Ceado E5P or E6P. They are commercial style grinders with larger 63mm burrs - bigger burrs generally produce better grind quality. Hi TS, Thanks for the question. FYI the Brewtus is no longer sold in the US market. It is a wonderful machine and was one of the best values in dual boilers. The ECM is pricier but don't think it was ever 2x the price of a Brewtus. The Expobar was built like a tank. The ECM is much more refined in exterior details and under the hood had somehwat better components. Marc

hey mark, so the only reason i went to the pto 500 over thr 700 was cuz i only make maybe 2 lattes a in thr morning at most. so i didnt think i needed to have two boilers heated for one a couple.double shots. so basically what am trying to say is are thr doublr boiler.machines desig for more latte production?

Hi Jesus, The 500 is a fine machine. Actually working on a video now comparing the 500 with an Expobar Office Lever and Rocket Giotto type v. The dual boilers can do more brewing and steaming with less fluctuation in brew temps. PID in the 700 helps stop temp overshoots during heavy use.

Mark, On the cusp of pulling the trigger on my first Espresso machine. I love the look of the Rocket espresso machines, particularly, the Mozzafiato, Giotto, and R58. The questions I have for you, though maybe ignorant and a little leading is: How does Rockets build quality compare to ECM and Profitec? Cost comparison wise, which would you choose personally? And lastly, is there a benefit of a vertical boiler vs horizontal boiler in these machines?

Zack Bowe Hi, All are fine machines. Personally I find ECM/Profitec has slight advantage in reliability. They’ve started rated using stainless mushroom valves which are less likely to scale. When plumbed, ECM and P machines can do line pressure pre-infusion. Rocket machines cannot. Most people important is feeding quality water to avoid scale in first place. I would personally recommend the VESUVIUS V2 espresso machine , you carry by the way . Why isn't it compared ? Maybe because you won't be selling the other ones since it has more features?

Hi Chris, Thanks for your recommendation. The Vesuvius is a fine machine! For this video we picked our favorite dual boiler machines for the year. We did not consider pressure profiling machines for inclusion in this video. Their capabilities and cost are beyond mainstream dual boiler machines. I've seen 4 bars from plumbing... According to manual the maximum is 2 bars, isn't it?

Hi OM, ECM manual specifies using a pressure regulator if service line pressure is above 2bar (about 30psi for those in US). In US, service pressure typically ranges from 40 - 80psi (that's appox. 2.6 - 5.3bar). ECM also recommends a shut off valve on plumbed connection as there is no solenoid valve within the machine to cut line pressure. The Pro 700 and Synchronika have a mechanical valve accessible at the bottom of the machine for switching from plumbed to reservoir water source. This valve can act as a shutoff to cut line pressure but I'd still reccommend a shutoff on the supply side prior to braided steel line connection to machine. All that said, I've lived a little dangerously with a Pro 700 in the studio. It's been connected direct to line pressure of 60psi/4bar for more than a year with no issue. I'm not recommending that as there is a risk involved. But I've had fun playing with pre-infusion at higher pressures.

In regard to the Rocket, not having a visible shot timer on this expensive machine strikes me as a huge marketing fail. Just look at the competition....after all, it's not rocket science.

Boom tish. I was looking at that shot timer and thinking that's an awesome feature, as a recent purchaser of an R58. Bugger. :(. Still, pretty easy to source a timer.

My understanding is: it's not the time you pull the shot, but the color and consistency of the liquid. There are so many variables, that you probably are better to not rely on the time...but the quality. Having said all that, a timer would be nice (as on the R60V).

Hi Walter, Thanks for the comment. Heads up, this video is 5 years old. The Bianca is a good machine. I have evaluated it in the past. The DB machines from Profitec and especially ECM feature higher quality finishing and detail work than the Lelit. Marc

So.......... I'm from Melbourne australia coffee MIO is one of our worst coffees (period) it's cheap nasty and only used by small crappy cafes due to there get a certain amount of coffee rent the machine free thing that MIO does... DO NOT BUY

@@Wholelattelovepage Marc because HX takes water directly from the tank through the pipes instead of sitting and mixing up with old water in the boiler as it happens with single or double boilers... I am sure they are more temperature stable but I think I wouldn't guess the difference...

@@martinkulik9466 Okay. Brew boilers tend to be larger in dual boiler machines. But they also take in new water from reservoir and/or plumbed connection each time you brew. It's no different other than volume of turnover. Marc
