it's about human (earth) years as pointed with groot. Captain America was just frozen that's why he still got older but not physically, but Dr strange literrally came back in time many times with the time loop so he did not gain years. He technically just changed the past (a very small part of it) many times, but he brought a younger version of him everytime, therefore he did not got older.

If you're mentioning the celestials then you should really mention knull, as the god of the symbiotes he plays a big part in the Marvel Universe and spiderverse 😉 after all, the celestials filled his void in the universe, also fun fact in guardians of the galaxy the mining colony in knowhere is the severed head of a deceased celestial....
