Our Weber kettle smoked BBQ beef short ribs from Creekstone Farms, USDA Prime black angus beef, is ready to go! Only the best meat could do this competition with Joe Martinez of Smokin' Joe's Pit BBQ Cooking channel on You Tube channel.
Now back to these fine looking ribs. Using the snake method and some Ridge (made in USA) hardwood charcoal along with some post oak from Texas, we did a low and slow beef rib recipe anyone can do. All you need is the Weber kettle charcoal grill. In this case I used my Performer 22" model. Keeping the temperatures low but high enough to render the fat and connective tissues over about a 8 hour period was essential.

Todd that was a great cook brother!! I love beefers as I call them more than brisket!! Especially the 4 bone short rib plate! The drawback on those were great and you did the right thing bu trimming out that fat layer. It sucks that one bone has that large pocket of fat most of the time but the other bones make up for the loss!! Good luck in the comp and Sassy lock those elbows tight when you are filming, pro-tip!! hahaha

Todd found your channel through Joe, and had to subscribe because Creekstone Farms beef and your Weber Kettle. I use mine for some of my Q with post oak and my SNS insert. Hard to beat the versatility of a Weber Kettle, and my first grill, so I will always have a soft spot for them.

They looked great, however those are chuck ribs not short ribs. Not sure if that matters for the competition or not? Also, your editing skills are great!

Well, I have the order receipt says Short Ribs. Either Creekstone Farms messed up or I don't know what I'm looking at.

Yes they labeled them wrong. Short plate ribs are a 3 bone section, larger bones, and a little more meat. For comparison check out Joe's video. No big deal, they still come out delicious. Yours looked great!

Nice use of the Weber kettle. Not plugging any product but I think a SnS would have worked better. I like that you used prime as we all can't get Waygu..Be sweet to the camera because it we great.. Nit picky here but when you cut the rib, you had slivers of meat on the knife when a cut thru is needed. I would to see a side with the required meat. KZbin wants 8 minute, 10-15 minute videos. NOW,,, WEBER, nice looking Beef Shorts, Charcoal and Wood. Explained each step.. Great job and video.

Wow! I must pick up another short rib and cook it. I think you are getting my vote--great explanations of what you were doing. One question: I am still learning about meat grain and trying to remember to cut across the grain. When you cut the rib off, it looked to me like the grain was running from bone to bone. But when you cut the meat for edible sized pieces it looked like you were cutting with the grain. Please help me understand. Thanks.

I love the competition but they should let the 2 competitors decide if there both using a pellet smoker or a stick burner to make the competition alot more even.

Not a fair competition, you used a different cut of beef ribs, yours are Chuck Ribs vs Joe used Plate aka Dino Ribs.

I have a question about the snake method. I've seen others use this as well on KZbin. But it seems a bit at odds with the conventional wisdom which is to wait until the briquettes are completely gray before cooking. The smoke produced by black briquettes is dirty, thick, dark and leaves an unpleasant taste on the meat. It's not the kind of smoke or smoke flavor you want. Wouldn't it be better to heat up your coals separately and add gray briquettes as needed?

It really doesn't burn like that. Very clean. Use quality briquettes.

Ok....you trimming was hard to watch compared to Joe's.....lol....you should have bought a SnS Kettle...and not worrying about the placement of the Temp gauge. Great work on that Weber though..... that's where Joe cheated using his Smoker....so I gave you my vote!
