Wonderful video brother James! I like how you teach to cook and explain what you're doing during the cook and "why" you're doing it that way. Great looking ribs. I love using S&P on beef!!!! Bro, those look amazing man. Sometimes just the basics is the best. I love cooking with SPG, but I also like mixing it up too. That's the best thing about BBQ, there really is no right or wrong way. I mean you can screw up (and I think we all have), but the point is we all just do what works. Great video, thanks for sharing.

Curious about you calling them dino ribs. My Dad gavemy Mom a subscription to the Sun Set magizine many,may,many years ago and one month a recipe appeared entitled dinosaur bones. Itwas a very simple salt,pepper and fresh garlic rub. Bbq or oven bake. Eat with your bare hands or serve with tortillas and salsa fresca. We liked to eat them out in the patio andweshared them chihuahuas who looked so cute and funny carrying those big old bones. Yourrecipe looks very good.

I see you found a set of knives you like better than Dexter, huh. lol. I remember one of the first videos of yours that I saw, you were using Dexter knives and you said you liked Dexter and they were the only ones you ever use. lol This is just a suggestion, but when you’re mixing your rubs in the shaker, I always put a piece of Saran Wrap or foil over the shaker, then put the top on, then shake it up. That way, you don’t throw seasoning all over the place when you’re trying to cover the top with your hand and shake it up. BTW, those ribs look INCREDIBLE! 😋

Thanks scoe1972! When I first started out I really liked the Dexter knives. Don't get me wrong, I still think they're good knives, but I did find that I was going through several of them a year and I didn't think I was putting them through that much wear & tear. For the price they're good knives. The Dalstrong knives just feel different in your hand and they last a long time. They also have some cool designs so that's a plus.

Surprised you cooked them that hot. Didn't seem to bother them. Haven't had much luck with HEB's beef lately. Think my local store is butchering corrientes or something. Been around enough prime beef. HEB prime is choice at best, on a good day. Been having lot better luck with the Walmart Angus choice Chuck short ribs. I like to season them like i would a steak. And low and slow. Haven't had a bad one yet.
