pianos have many strings per note so that higher keys can sound as loud as the lower ones. If two same pitched strings are slightly out of tune with each other they create a chorus like effect that sounds very lush. It's that his piano is just out of tune lol. Also he plays 7 chords which are very lush and jazzy sounding

All he's really doing for the most part is banging out chords and improvising simple stuff along with it- you could probably learn this pretty easily if you went along with a jazz improv book or something of the like.
