Hi Guys- Im am a 50 year old women and your video helped me so much! I did it by myself with a doe that was frozen and that made it a bit more difficult for me. In ND this year the temps were below freezing when this deer was taken. I followed your video and it really helped me. Some of my cuts are not pretty but hopefully I will get better over the years. Nothing better than having a good friend that's a a hunter he always hooks me up with stuff and I definitely appreciate it , he's took me on some adventures he pretty much taught me like your doing your son ,I enjoy helping him process the game making , burgers ,jerky, sausage and packaging it up, there's no better feeling than firing up the grill with your friends and family and everyone enjoying the day and the food you provided while having a couple ice cold bottles of beer .

My Pro Tip. Save those shanks front and read. And then sear them off in a hot cast iron pan to get a bit of color. Then slow braise them with some beef stock, wine tomato paste and what ever your choice of vegetables you like, After about 3-4 hours of low and slow cooking you will have some very delectable venison shank stew with the most savory and delicious meat you never knew existed on that deer for such a lower end cut

I could watch this 90 times over! Ever since I harvested my second deer, I was taught to butcher my own. I love how you guys go into great detail as to what you can do with each muscle group. I have learned so much from watching this. I honestly would have never thought about the 2 flat iron steak on each front shoulder! They usually ended up as burger, or a small roast. I'll be cutting flat iron steaks from them going forward! I can't wait to harvest a few deer this year so I can put this video to use, and put some mouthwatering goodness on the table. I also love how thorough you are about getting all the meat from the carcass! I hate seeing game wasted! Thank you guys very much from making this video. Never actually been into hunting before, but after watching this I think I could process the meat respectfully and want to try. My brother has a couple of rifles appropriate for game hunting, and now I think we just need to educate ourselves on field dressing so we don't mess that part up. Love all the vids from you guys. It helped me get confident enough to start breaking down whole primals myself and the results are just awesome.

My family ran a grocery store and was 3 generations of meat producers/cutters. My father-in-law spent 30 years working in and around meat processing. All that knowledge and there are still times I'd like to have a deer, be by myself and take hours to watch this video at my own pace and butcher step-by-step with a better understanding of what I'm doing. I stopped deer hunting 10 years ago because of when growing up, i never had the opportunity to learn how to process the meat properly, There was no youtube & no matter who had venison to eat - It always tasted very gamey & smelled like actual shit....... UNTIL,, just a couple weeks ago a buddy had some venison that he had processed with the help of someone who takes hunting/processing seriously & I was pretty floored at the difference in taste !!!!!!!! Lets just say that I will be hitting the field this year since they both offered to help process my next deer..........

I self taught myself how to butcher venison because it drove me crazy to pay someone to do what I knew I should be able to do myself. I really enjoy watching videos like this to either gather more info or to validate my methods. When you say in the past venison tasted/smelled foul, that is most likely from improper field handling. I'm a Laboratorian by occupation so in as much, I deal with bacteria. From the time you put the animal down, the natural Flora(bacteria) inside the animal grows exponentially and is giving off nasty gases. You have to get the guts and organs out asap and cool the carcass. That is the most important part of keeping the venison from obtaining the foul smell and flavor. Simply put, get it gutted as soon as possible after the kill and cooled down. Oh, if you get any gut material on the meat, you have to wash with a lot of water and hope for the best.

@@Peakbase Preparation and care from the moment that animal is shot is everything when it comes to the flavor of venison. Poor shot placement, waiting too long to get the deer field dressed, improper storage during the hanging process(temps too high or low), not removing the silver-skin or excess fat, not removing the glands, all these things can contribute to very gamey tasting meat. Done properly, to the trained pallet venison has it's own flavor but to the average person, they likely won't even know it's not ordinary store bought beef. It should never EVER taste gamey. I've been butchering my own for a number of years and have been hunting all my life. The only time I've ever encountered a situation like that is due to my own mistake because I hit the animal poorly, rupturing the stomach and on top of that, I didn't find the deer for 6+ hours of tracking. All that combined left me with severely tainted meat and it was extremely disheartening. Thankfully that's a once in a blue moon type of situation for me.

Thank you for the information. I shot a waterbuck over the weekend and used your video to process the meat. It's a little bit larger than the deer you did here (mine was just over 200 lbs), but the principles are the same. Took me about 9 hours, but it's in the freezer now.

As a hunter i have developed my own ways of processing my deer. Usually I disagree with others on their ways of of processing animals. I was glad to find a video that I not only agree with but intend to use information from. Y'all did a great job with this deer and an even better job describing what you where doing. below is a note for myself, and anyone I refer this video to. Thanks for the video. It is a big help. 27:05....between the eye of round and the bottom round there is a chunk of fat and in that chunk there is a gland, and this should be removed....

I've been a meat cutter at Hannafords supermarket for about a year now and I wanted to learn how to process game for not only myself but for some extra money. This video certainly helps and gives me a good idea on how to go about it. Now all thats left is some hands on experience. Just a little tip I found with the neck. If you cook it down in a crockpot until it shreds apart, remove the bones add bbq sauce and continue to cook it makes great pulled bbq sandwiches It’s great for parties it makes a lot Thank you guys this is the best deer butchering video I have watched

Really great video been doing this for 50 years now. The big difference in what i do i dont grind. Just never cared for ground vinisen. I take all the chunks of trim meat and pressure can it makes great venison pot roast for vinisen splits. The canning process breaks down any sinews left and make it incredibly tender also slice my back strap about 1/2 to 3/4 inch to make great sandwich steaks.

My neighbor JC showed me how to do a complete deer prosses from field dressing to butterfly back staps in 1978. As a 9 year old I was in awe. So here I am watching it still. The difference between Ohio deer and her in North Carolina is your extra trimming pile equals one full buck haha.

Awesome content, I've hunted deer for nearly 60 years here in NZ and have never had venison ribs ! I usually just trim all the meat from between and along with most of fore 1/4 get it made into patties (burgers). One comment you made about being given some meat and just saying it's deer reminds me a a joke. Dad was given some venison and while the family are eating it the boy says "what sort of meat is this dad?" Dad says "it is what your mother calls me". The girl yells "don't eat it! its a fucking dick!"

Gentlemen, this is the most informative butchering video I’ve watched. I’ve been butchering and processing my deer at camp for a few years now, and always looking for more information. I never knew about the front shoulder gland, thanks for that. I use a lot more of my hind quarters to grind for summer sausage, because my family isn’t big on roasts, and bologna is King here in central PA. You got a lot more product out of a deer than I do- sure helps to have a second set of hands to get the most out of your deer, especially when you have more than one to process. Good luck hunting!

Ive aged my deer carcass in a large ice chest w plenty of ice. I live in Texas so even during season it can get very hot out here. I keep it on ice after its been skinned and while the water runs out I'll grab another bag of ice. Its good to try and keep the meat as dry as possible. The meat ages very nicely and had almost no gamey flavor and becomes very tender.

Im in the south. I have always aged my deer in a cooler full of ice but the meat never this color or texture. This looks much better.

They keep the best cuts for themselves or to sell while charging you full price. I stopped buying cattle after our old butcher retired and left his son the business. You can get fleeced real fast with a bad butcher.

I make very thin cutlets out of the rear quarter rounds, with a couple of exceptions. The sirloin tip gets cut up into chunks for stew meat, goes great in a crock pot. The eye of round gets separated and left whole. Venison cutlets are incredible. On a sandwich, by themselves in garlic & butter, or even with a quick marinade on them, tons of things you can do with them and they cook in a matter of 1 or 2 minutes. Love em.
