I guess, in your favour is having one exceptionally well machined Stuart triple to replicate parts from. They do run very nicely when operating as they should. Love the last section of your upload running on steam.

probably a 60/120fps or higher setting for real slow motion capture on the camera

Thank you for your advice. I don't really have the time to mess with the camera settings as I am usually too busy actually doing the jobs that you see me doing. I do however know what you mean though, as I have been a professional Videographer since the late 1980s and I currently shoot in 50p as I live in England . . . . .

Keith, when you use Viton O-rings instead of cast iron piston rings in your steam engines, how do they hold up to steam? Do they break down due to the heat?

I don't use Viton, I use steam grade Silicone O Rings. They seem to work fine.
