I am not sure if the checkpoint stuff was explained in detail yet, but I always assumed from the discussion of Subaru's powers in S2 episode 9 that Satella makes checkpoints at such points in time when Subaru has the lowest chances of being trapped by true death. Meaning that there is always a chance for him to survive in each of the checkpoints so far. There have been no checkpoints that would absolutely kill him, thereby trapping him forever in a death and rebirth loop.

Echidna's price is pretty much witnessing Subaru doing every possible visual novel route there is, she'd probably only allow him to reach his desired outcome after exhausting every dialogue option and branching path. All of the witches agreed to be housed here for a specific goal, because of this it’s likely they will generally follow what Echidna wants, just not at the cost of Subaru being harmed/monopolised. In the anime we don’t really know much about the witches or what they currently want, you get a bit more info in arc 6 though.

Probably isn’t possible considering the contradicting requirements for each witch. For example minerva would likely have Subaru reset if anyone so much as got a single scratch on them, this would directly clash with Sekhmet as it’s likely she would never have Subaru reset as it would be deemed as too much effort. Subaru would likely break trying to balance out more than one witch contract let alone 7 😭
