How is it you're serving food without portioning it first (ie 1:09:20 where you put the brownie tray on the dining table rather than a portion of brownie)? The same happens in other runs of yours with soup, mash, broccoli etc but I haven't seen it mentioned how you're actually doing it. I'm assuming it's not a mod because y'all do it in the speedruns as well, but I don't remember that happening the last time I played (which admittedly was a while ago.)

When the taco update came out, portioning mechanics changed. Any portioned foods that don't require plates, such as bakery items, soup, broccoli, mash, bamboo, will be portioned by the customers if you put the pot on the table. It's the same mechanic that the customers use to take the tacos from trays. This is a vanilla feature in the game so no mods required :) As long as the food is in a form that a customer will eat as is, they'll take from it. The only exception to bakery items would be items that need the toppings to be added to it, such as cupcakes or doughnuts. Cookies and brownies work because you add the flavour to the batter before you cook it. As long as a spongecake has a flavour on it, the customers will portion out of that as well.
