for the lack of oven space, it helps to also cook some stuff before the turkey goes in, and then when it's out and resting, to chuck everything back in to warm back up! you can also get hot plates and warming trolleys if you want everything piping hot. also margarine and butter are pretty much interchangeable in recipes (alongside oil - for the most part) so you don't need to fuss over two separate tubs. please be careful of the sodium content of bouillon cubes though, adding it to everything might cause havoc on your health in the long-term, and can cause foods to be saltier than usual so make sure to adjust seasoning as needed

for new recipes - especially major ones - watch several youtube videos by different chefs and home cooks. write down recipes and tricks, then create your own recipe to your liking. also, start thanksgiving cooking earlier in the morning, with some things like desserts the day before. you both created a lovely memory this year. love watching your family bloom and grow. happy holidays.

Stuffing goes in the bird...dressing is cooked as a side dish...however they are exactly the same thing. Same recipe etc, just cooked two different ways. In my family we don’t stuff the bird as it takes about 25% longer to cook which dries the bird out,and we always wanted/needed way more stuffing than what could be cooked in the bird so we started to cook it separately in a casserole pan.

If you don't want to do stuffing, you can fill the carcass with whole lemons and/or onions to keep the Turkey juicy and heaps of unmelted butter mixed with herbs, garlic and seasoning stuffed under the skin. 🤤

Wait, I want to see the final table of food😫 Drying the turkey is so the skin is crispy, if you don’t dry it then it won’t be as crispy! Also fyi, use canned sweet potatoes, so much easier & less work! I make sweet potato casserole every year but not the marshmallow one I do the pecan & brown sugar topping, I keep my potatoes a little lumpy not smooth & I use the cans, so good! You could also by stuffing at the store in a bag/box to make. I love all of the cooking from scratch but if you want to make it easier in yourself next time!! Also with the oven space it’s all about timing & covering with foil to keep warm, I’m surprised you don’t have a warming drawer in that kitchen, those come in handy for the holidays!! I’m impressed that you are doing all of this by yourself & filming it all & doing it all from scratch 👏Happy thanksgiving 🦃

My favorite way to make my turkey is take it out depending on the size of the turkey about 5 to 6 days before in the fridge on a tray the day of if still little frozen put in cooler in a water bath with packaging still on the take every thing out wash it pat dry and wash your hands. Then mix salt,pepper diced garlic garlic powder and rub all on turkey I like putting onions,garlic,and carrots in side the turkey I'm not biggest fan of using stuffing in the turkey, then add a little water in side the roaster so that have a nice broth for gravy the roaster we plug in to the wall oulet instead of putting it in the oven so that we can make all the sides in the oven. And go off how big the turkey is may take 4 to 5 hrs if it's a big turkey I like start high temp then turn it down about 2 hrs and based it every hr. Then check to make sure it's cooked all the way through. Then I remove the turkey then use a strainer to put that yummy broth through so your not getting any bones and making it smooth then add your stuff to make gravy. You will get the hang of things by the time Malibu's second Thanksgiving and she will get to eat solids you will be ready for the next year and enjoy cooking for Malibu.☺️

For the roux, measurements are important and key is to add flour slowly and keep stirring consistently! At least this is what works for me ☺️ keep mixing til light brown / nutty smell

I made all of the sides, some in the oven, some on the stove, and used the warming drawer and a microwave that has oven settings. I made turkey, gravy, cranberry, sweet potato casserole, baked Brussel sprouts, stuffing, mashed potatoes, honeyed carrots, Mac and cheese, and for appetizers blue cheese stuffed bacon wrapped dates. The dates I wrapped and put in the fridge the night before. Cranberry fridge night before, same with any chopped ingredients I could pre-chop. Most stuff starts on the stove, anything like mashed potatoes that can be warmed last minute can just wait for the oven to be open. ❤ also butternut squash soup lol only on stove

I cooked my first turkey this year bc my mama passed n Feb..I cut up one lemon one apple and one onion in quarters and stuffed the Turkey with it along with the herbs u used and butter. I lifted the skin of the turkey and brushed the butter n herbs under the skin and my family said it’s the best turkey they ever had. And I had to agree. It was easy and the turkey was so moist. That’s the hard thing to achieve I’ve heard is a moist turkey. Turkey tends to get dry very easily

Just for future reference, the seasoning for the Turkey you can go crazy on. Most of them fall off anyways. You have come such a long way in your cooking adventures and I’m here for it.

Girl, you gotta take that turkey out of the freezer like a WEEK before you want to cook it. You need one whole day of thawing in the fridge for every three pounds of turkey. So if you got a 21 pound turkey, that's 7 days of thawing.

In uk it takes like two days to defrost frozen turkey. We usually put streaky bacon on turkey for Xmas and beef dripping, Stuff it with an onion. Roast potatoes, sprouts, stuffing etc gravy and cranberry sauce yummy

Quick tip to thaw a frozen turkey out quick , put it into a cooler with cold water like a water bath with it still in its packaging and turn it over every few hours. You can quickly defrost it over night completely. It’s been my go to cooler tip every year. Because thawing it out in the fridge doesn’t always work.

You cook your turkey first, early in the morning, have your sides all ready and the n you take the turkey out and cover in foil, then you cook your sides in the oven (most take about 40-45 minutes) while those are cooking you make your gravy, and carve the turkey, by the time you are finishing that up your sides should be just about done. Sides come out and usually are served right out of their cooking dishes, or you can put into serving dishes. This is the easiest way to have your bird and sides done around the same time. Sweet potato casserole, the sweet potatoes needed to cooked a little longer then they would have mashed up easier, but I like my casserole with some texture and not a whipped perfectly soft consistency. You can also bake the sweet potatoes which is super easy and then they slide out of the skins very easily then you mash them. This is the best way to get the most yummiest flavour out of the sweet potatoes. You can also make this a day ahead and save you one thing you don’t have to do it all on the same day.
