Really enjoyed this video. I had a friend years ago, whose parents were from Sicily. He taught me how to make his mother's meatballs. He used fennel seeds and anise, garlic, onion, bread crumbs, egg, parm cheese and tomato paste. He baked the meatballs. Oh my gosh, they were so delicious. Will try your receipe, sounds delicious, too.

Knocked some of these out this weekend along with her marinara sauce (which I've made numerous times now) and it was great. Didn't use veal because it's not available where I live so just went with ground meat and ground pork.

They look delicious. I'm Italian and never heard of onions in meatballs. I've made them for years, sometimes I soak bread in milk and sometimes bread crumbs. I di use fresh finely minced garlic instead of granulated and quite a bit of Romano or parrmesan cheese or both. Fresh parsley is a must. You didn't add cheese? Anyway I will try your recipe...everything you make is wonderful!

If you mix all the ingredients together, THEN add the meat and mix it in, you won’t overmix/toughen the meatballs, but the seasonings will be evenly mixed in. The breadcrumb/seasoning mixture is called a panade.

New fan 😁 I wanted to see how you make your meatballs compared to mine. Mine are very good! Watching your video I see the differences: mine are big.... so, I will try the cookie scoop. I never added tomato paste, I'm going to try that, and I grate the onion on the finest grate, the consistency is kinda like apple sauce. That's my gramma's way, and that i just can't change 😁. I trust your recipes and am excited to try it. Merry Christmas!

Did you put any grated cheese in the mix ?
@LS-uz4cz Жыл бұрын
Not sure if I like tomato paste in there. What do I substitute to keep the moisture?
@maryellennorelli50369 ай бұрын
I never used tomato paste in mine either, but I will try it today. I also never used it in the mix or on top of meatloaf until I tried Ina Garten's recipe and it is delicious. Maybe add a little broth for moisture if you prefer. Happy cooking.

Italians use 3/4 cup grated cheese too

I think your great but you didn't give amounts on the meatballs. I'd love to make them the same way.

Not a bad recipe, but in Italy, we don't put onions in meatballs.

Can we please educate people on veal? I worked on the farms during animal science school and could never eat it again. I know raising animals for slaughter is bad enough but what they do to create veal is horrific. They are forced into dark crates at birth so they cannot move. Not moving prevents muscle development. I was literally in tears and quit college because of this. Went home to my Italian immigrant grandmother and begged her to stop cooking with veal. I use ground chicken thighs instead in my meat balls.

😢😥😭😡😫😩😥😢😭 land that is used for grazing is getting hard to find in Italy the land is made for goats. When growing food it dosen't mater. Be it fish, beans chicken, pork, beef, or corn, no matter love it after it's in your belly. Not in the process of getting there. Food for thought a checken or a pig would love to eat you as much as any other food whether you raised it as a family pet or as wild animal. That is the same as with most animals. Mostly they are here as food or as a beast of Labour. As my grandfather would say kill it eat it or starve. But quiet about it.
