I am a senior who has watched your videos for a couple of years now. I love the way you have expanded your cooking skills. I feel so many of the KZbinrs should title their videos as “ how can I cook my cheese today” 😆 it’s refreshing to see recipes without cheese being the dominant item in each dish. I really love your potato/onion, green beans and other side dishes. Keep up the good work. I’m going to order your cookbook next week.

A funny story. I did not realize that when u added stuff to ur oil that each time u added say a piece of chicken that the temp of the oil would drop. I never took the temp. Then I seen them taking the temp of their oil most of it said 350 to 360 degrees but watch temp because the oil would drop and the temp is what makes ur crust too light too dark and not cooked in the middle or cooked too long. I felt so stupid Because I don’t like the mess that frying causes and I have to clean up. I didn’t really fry anything. Finally after 20 years of cooking I watched KZbinrs just taking something with a heavy bottom and adding oil to the shallow pan and deep frying their foods. I thought that was just what I needed to do to get that deep fried taste without wasting all of that oil in my fry maker and it sitting with dirty oil in it. So I used my cast iron.
