Rebecca, I freeze my bacon grease in silicone muffin cups, maybe 2 or 3 tablespoons, when frozen, pop them out and store in freezer bags. You can pick out one or two pucks for cooking keep rest frozen and it will not go bad! I call it liquid gold!

If you add a bit of curry powder to that chicken salad, you have a variation of a common sandwich filling here in the UK known as Coronation chicken. Which is chicken in a mayo/yoghurt based sauce with curry powder, golden sultanas or raisins and small diced apples.

I love curry chicken salad. I used celery, cashews, and dry cranberries (I use onion powder or green onions since I am not a big fan of raw onion). I like chicken salad with pecans, dry cranberries, and celery with a little bit of poultry seasoning.

I do apples, golden raisins or cranberries, celery, carrots, and sliced almonds. For the dressing I do mayo, a splash of vinegar, salt, pepper, parsley, and paprika. I always find that lightly toasting the nuts is key! But chicken salad is wonderful because it lends itself so well to customization 😊

I don’t consider any food excessive. You’re not buying the food to keep it in your house and let it go to waste, you’re eating it. You’re also buying for a family which is more realistic than a single person.

You can occasionally find Tru Lemon on sale. It lasts forever because it’s dehydrated. One little envelope is equal to a wedge of lemon or you can now buy it in a shaker bottle. I use it liberally in a lot of dishes. Even just a sprinkler too it’s like squeezing a lemon wed or two over it and adds a lot of brightness to the food

@@janetdw I keep Tru Lemon on hand to add to bottled water. It adds just a hint of flavor. I keep a few packets in my bag if I can't get fresh lemon the packets work in a pinch. I've never found it on sale, though.

Tip: if you have dried minced onion, you can rehydrate it with hot water, and then you can have it whenever you want without the hassle of mincing a fresh onion.

Hi there Rebecca! I hope you are adjusting well to your move. I want to hop on here and say you are doing a great job. A new direction with your videos, your surroundings, your circumstances, and so on. It appears you're doing well. As a woman in a different season in my life (daughter, mother, sister, wife, grandmother, aunt, etc), please don't feel the need to explain yourself or apologize for stocking up your pantry when the prices are right. That's the smart thing to do. Also, give yourself a splurge just because "item" every once in a while for doing a good job as a pat on the back. Be proud of yourself! I am proud of you. I did screenshot your orange chicken recipe and am going to fix it tonight for my twin 10 years old girls. I'm going to have to have to sub half pineapple and half orange juice, but I think it's going to be great. Thank you for sharing your journey with us.

My 92 year old mom and I love what we call princess chicken salad sandwiches. I add cranberries, grapes or raisins, finely diced celery, diced apple, diced pecans or walnuts , mayonaise, black pepper and yellow curry. We have it on white bread, whole grain bread or on cinnamon swirl or raisin bread. It is surprisingly delicious on the raisin bread. Mom and I decided if she still entertained that sandwich would be a great brunch item. It seems fancy, lol.

Walnuts are a very common thing in southern chicken salad and sandwich shop you go to in southern Alabama you would be hard pressed to find chicken salad with out any kind of nuts❤❤

Sometimes when you try to cook dried thing like pasta, dried bean, or oatmeal with an acid like tomato sauce or vinegar they don’t want to soften up. If you add a little baking soda it will allow them to take up water better. For some reason I have this problem with my tap water, probably should have it tested. I never understood why it took so long or in the case of beans never got soft. Baking soda makes a huge difference. I would try it if you want to soften spaghetti already in the pasta sauce. It doesn’t take much, maybe a 1/4 teaspoon.

Your water is probably a little harder; higher mineral content will be harder for pasta to absorb it! Great tip, tbh, so many recipes (and cleaning tips etc) forget to account for the differences in water hardness, or city vs well, etc.

@ that is what doesn’t make sense to me, my water is hard. Hard water should be alkaline already, and baking soda is alkaline, so I don't quite understand why it works. It is my understanding that baking soda works with tomato sauce or vinegar as it neutralizes their acidity. 🤔

@@Mamaazhiiwe There might be a few interactions going on here that's helping you. the baking soda binds to the minerals most common in water more readily, so then they're not interfering with the pasta. The minerals, even though making the water alkaline, also stiffen gluten, whereas the baking soda making the water alkaline would help weaken a gluten bond. I'd be curious what adding vinegar or lemon juice to your pasta water does, since that would supposedly help soften the water?

Another use for your cranberries: Broccoli salad... always requested when I have to bring a side... 3 broccoli crowns, chopped. I cut mine into smaller pieces so the dressing can touch more of the florette... Set aside. I take a half a pound (or 1/2 a pack if it is not quite a pound) and I place it in the freezer for about 15 minutes...helps you to cut it into pieces. Cut it into 1/4" pieces. Fry it up and drain on a paper towel. Set aside. In a large bowl, add your cut broccoli, bacon, 1/4 of a red onion, chopped; 1 c. sharp cheddar (shredded), About as many cranberries as you added there. In a smaller bowl, add 1 c. mayo, 3-4 T sugar, 1/2 c. vinegar. Taste and it should be a balance between sweet and tart. Adjust flavors to your taste. Mix into the salad. Enjoy!

I make basically the same broccoli salad too. The only difference is no bacon and my recipe calls for 1/2 cup sugar and 2 tablespoons apple cider vinegar. The recipe originally calls for raisins but I use dried cranberries. So glad to know that I am not the only one to do it this way.

Rebecca, you actually made the chicken salad that I make all the time. But I do add a little dry dill. My family loves it. When I find a deal on boneless chicken breast I grab them so I can cook them in my crockpot and shred them up and freeze them in about 3cup freezer packs for when I need shredded chicken and I save so much money.

I was a cook in a Chinese restaurant for about 20 years. If you grab about half a handful of your chicken, make a fist and squeeze it through the space between your thumb and forefinger, It is quicker and your chicken will be more uniformly shaped. Also, if yoy prefer your orange chicken spicy but want to leave it mild for the kiddos, you can make chili oil to add to yours by pouring hot oil over crushed red pepper and a tiny bit of salt.

@@DollarTreeDinners A tip for the chicken lollipops is to use a kitchen towel to grab the bit you're pulling off. It's slippery so it's hard to grab with just your hand but the kitchen towel sticks to it and gives you some grip.

Keep your hydration up for both areas as well as moisturizing. Visualize yourself with luscious lips and manicured nails that you are proud to have. Find something not attached to your body to fidget with or pick at to get that sensation dealt with and reward yourself for progress. You can change your habits, I know it!

I love the “use what you have” meals. I’ve never been very good with that but I’m trying. My favorite chicken salad recipe is; Rotisserie chicken meat or roasted white and dark meat Finely diced red onion or shallot Mayonnaise Dijon mustard Lemon juice Tarragon- this is an herb that you either love or dislike but I love it. I don’t put any salt and pepper because the mayo and mustard have enough.

for fellow Tarragon lovers. Nigella Lawson said on one of her cooking shows that she mixes fresh tarragon with dried tarrogon and they create a more complex and delicious tarragon flavor. I now always do this. As a general rule things get more interesting if you use various incarnations of the same ingreadient....Freeze Dried, Fresh, Frozen etc. So Far it works with tomatoes, Onions, Herbs in general, Corn, Garlic. Not only do I just love your content for the ideas, but it is such a cultural show really! The food from the US is quite different from anywhere else. We are Aussies and it’s fascinating watching your shopping hauls and cooking. Everything looks amazing. Some things we can’t make easily since the ingredients are not available here, and some things just don’t suit our palates- we have a family member from the US (by marriage) who has made us things like US cornbread, and to us it tastes like a desert! But what a delightful idea.

My spouse is one of those fussy chickens who thinks the smallest amount of sugar ruins cornbread, but spouse has the palate of a donkey’s backside. I can eat it either way but avoid hush puppies altogether.

My mother fried left over pasta. Butter in skillet. Dump pasta mixed with very little sauce in and let fry until crispy around edges. Or leave sauce out and use butter. Comes out like a pancake. I love it and still fix it like that.

My son used to try to order just pan fried noodles when we went out for Chinese food. He loves starches . I made him get something with vegetables also but he always asked for a side of pan fried noodles. He would’ve loved pan fried spaghetti!

@@janetdw , when I make my own pasta sauce, I put in tomatoes and diced onions and diced colored bell peppers and diced fresh garlic cloves. And herbs I flavor with those and use no salt tomatoes and I use black pepper,just a dash or so . Then I make my pasta . The next day I fry it in a little bit of butter or margarine/ oleo. It's so good that way .

I just finished the chicken salad I made yesterday. I keep it simple too, but also enjoy things added to it. I keep canned chicken in my fridge so it's cold, drain, then add mayo, salt, pepper, some form of onion and I have to have chopped celery. Yummmm. Fruit and nuts are very normal in a chicken salad. Some people add grapes, apples, raisins, and the dried cranberries. 🥰🌱🌷🌹💐💗✝

Hersheys syrup in vanilla yoghurt. Slice in a banana and it's a banana split! Check the other ice cream toppings too. GIRL! You just moved cross country, of course you need to build up your pantry. AND it is winter and you never know when a blizzard might blow in. Buy three or four when it's on sale!

If you soak some dried onions at the start, you can have onions for your hot dog very similar to the onions on McDonald hamburgers. I use that trick all the time. 😄

An easy way to bread chicken. Put all the flour, seasonings in a brown paper bag, put all the chicken in and shake the bag. Everything gets coated evenly. A lot easier than using a container and doing them each piece.

OMG I had a jar of unstrained bacon fat in my frige for 30 years and it was fine. I would just add more on top wheneerv it would starts to get low. Never went bad on me or got rancid. Then in December I broke the jar and now I have to start over. 😪 I like to add a little to canned green beans to give it a flavor boost.

My chicken salad 1 can of drained chicken and squeeze out the juice with your hands 2 diced hard boiled eggs without the yolks 2 sweet pickles diced 1/4of diced onion Salt and pepper just a sprinkle Red grapes depending on size 1/2 or 1/4 chopped 1/2 cup to 1cup of mayo My own personal recipe I've been making it for 30 years

Use a strainer to drain out the juice in a plastic container or a jar and, seal it with a lid. You can store it in the freezer or refrigerator and use it for something later. 8:35

I love fruity chicken salad. You can also mix it up by adding grapes or pineapple and/ or almonds with red or green onion instead of white. If you like celery throw that in to make it a true southern chicken salad.

Use McCormick Mayonaisa, it has lime juice in it. In the hispanic section in the supermarket. It is so much better.

If you're not using the spinach for a salad, just put the whole bag in the freezer... You can crunch it up into little pieces to add to soup or anything.

Love your videos. When I make my chicken/tuna salad i use 4 chicken breasts, two large onions, grapes, apples, cheese, red pepper and we make the mayo a little on the sweeter side. Also add in Dill and a little lemon zest. Trust me, we are a household of 3 and we normally spend $600 a month on groceries. Just because my daughter's BF eats so much since he works out at the gym. He does lots of high protein foods. When I make orange chicken i use orange marmalade instead of the sugar and OJ. I usually get the no sugar added marmalade and it's little less calories.

I agree with you. The whole canned tomatoes are better than the diced can tomatoes. My Mother used to make her spaghetti sauce etc with the whole canned tomatoes, she would smoosh them herself into a puree of sorts.

When I was growing up, we canned whole tomatoes every single year. That and pickles. Usually we would do about 75 quarts of each! And we did it in a little tiny kitchen in the heat of summer. We learned to do it during “graveyard shift”. My mom and I would take a long nap in the day and then get up when it cooled down and start canning and can all night long. My dad had a friend who was a farmer. After they had picked the tomatoes commercially for the last time he would call him and say “hey in a week or so those little tomatoes that aren’t worth it will be red” and we would spend two days picking tomatoes and then the next couple nights canning them.

Totally recommend chopped grapes, or sweet or dill pickle relish, or water chestnuts as additional add-on ingredients to chicken salad. Grapes are especially awesome - better than apples. A bit of Dijon mustard can also elevate just a simple mayo/s&p chicken salad.

When I make salads(chicken,tuna, macaroni or potato) I use mayonnaise and miracle whip..50%-50%. The flavors blend together great.

I love pecans, apples, cranberries, onions in chicken salad. It’s delicious, such a great combination! Yummy. Also, if you have a filet knife for cutting fish, it might work better for the lollipop chicken 🍗 preparation from a sharp knife stand point? But, idk, I’m honestly just guessing myself ❤

Seems like for a while, every baby shower there was chicken salad, which had in it pecans, grapes, curry, sometimes cranberries. So i knew you were going in the right direction. Lol! These recipes/suggestions are so useful!

My chicken salad also has dried cranberries (plus sliced almonds and a big squirt of sriracha). The key for me is that I have to make it the day before I want it so the cranberries have a chance to rehydrate a little. And I know you'll be using yours for the puppers, but I love gizzards! I simmer them for a really long time (with the usual stock add ons) till tender, then bread and fry. It might be an acquired taste if you've never had it but they're so good.

Try what I call a breakfast biscuit in a greased muffin pan. Mix your choice of crumbled/chopped breakfast meat, onion with beaten eggs and shredded potatoes and cheese. Mix and fold in just enough biscuit batter to hold it together when done. Pop it into the oven. Serve as is or with white/sausage gravy It's yummy. Another way is to omit biscuit batter and line a large greased muffin tin with shredded potato and spoon in the above egg mixture. 😮 Lasagna rolls look excellent! All variations, I.e., Italian sausage. I can only think they'd be nothing but favs. Ty

The technique you used to cook the spaghetti dish is something I do all the time to save having to clean another pot that was only gonna be used to boil the pasta. And it’s actually a technique that Italians use to cook a spicy spaghetti dish called “spaghetti al assassina” or “assassin spaghetti”. Except they toast the pasta first and they slowly ladle the sauce in, kind of like risotto, until the pasta is cooked to your preference.

Ditto on the lip biting scenario. I too have one spot that seems to do the same thing, but I literally use tiny scissors to cut it off. Love your creativity with coming up with things to cook. My mom taught me the "make something out of nothing" trick in cooking. Great job!

I just posted this recipe on another channel I watch because I refuse to gate keep such a yummy recipe. Measure the following with your heart: Shredded or canned chicken, chopped up walnuts, green onion, honey crisp apple,celery + salt, pepper, mayo and some agave. I had it with toasted sour dough and pepper jack or Swiss cheese. Crazy good flavor and textures.

Chicken salad. Try green apple diced and sunflower seeds. You get the tart and salt.

My chicken salad: for the 2 ch. breasts you have, I would chop and half an apple (unpeeled), 1/2 c. halved grapes (if large grapes, quarter them, 1/4 - 1/2 chopped pecans (depends on how much you like pecans... start small and add if you want to. Add mayo, s & p. You can add more or less of any ingredient to your preference. We love this with croissants. We use mini croissants for showers and parties (like a Super Bowl party!) If I make tuna salad, I add to a can of tuna (drained), 1/4 apple, mayo, s & p, sweet or dill relish (about 2-3 T), A slice of onion, chopped. Again, tweak the ingredients to your tastes.

I typically eat hot dogs once or twice a year. My best memories are from eating them at Fenway Park when I was married and we first moved to Boston - bleacher seats were just $8 US back then. We would buy 2 hot dogs and share a beer. Since I saw your video, I can't stop thinking that it's time to have a hot dog! Luckily, there's a place in town where I can buy one. I don't think I could manage a huge pack of them!!!!

If you have a Walmart near you, I recently found out they sell the rotisserie chickens that are not sold the current day in their deli/fridge area. They are a reduced cost around $3-$4 per chicken in my area. You could still make broth and have the chicken already cooked for meals coming up. It seems like you could cut your chicken cost in half this way. Also, would leg quarters be a better deal? They range around .99/lb or less near me.

My Walmart doesn’t have a deli unfortunately, and the rotisserie chickens at Safeway are $10. Plus I wouldn’t have the flexibility to make things like orange chicken with the rotisserie, but it’s a great tip if you need shredded or cooked chicken for a recipe like the chicken salad :)

We are not your spouse or your accountant, do not feel that you have to justify yourself to us! I know you’ve gotten a following from providing cheap and accessible meal ideas but that doesn’t mean I am expecting you to live like you are in a food desert or in a budget pinch all the time. If someone has made you feel otherwise they need to get their priorities straight. What is hard work for if it means you can’t buy some “non essentials” as you call them. I didn’t see anything in your haul that is not in some way in most American homes. I’ll get off my soap box now but I really hope you know we love and appreciate your hard work! As always thank you for the meal ideas. We are moving in a week and these will come in handy for emptying the fridge :)

For spaghetti, the last couple of years I've been buying the pot-sized spaghetti. That way it's already "halved" and I don't have to break the normal sized ones in half. Walmart (Great Value) and Kroger have it for sure. I was always breaking the full-length ones in half anyway; this just saves me a step. For Walmart, it's called Half-Length Spaghetti, and at Kroger it's Pot-sized Spaghetti.

Giiiiirl. First you got me with the no boil Kraft Mac n Chz which I have been shouting about from the rooftops to all of my friends and now you're giving me a no boil spaghetti & meat sauce? My gasts are flabbered! I have been cooking for 30 years and I'm just out here reading directions like a moron and you're out here in the world doing things that JUST MAKE SENSE. I'm loving these videos that are sort of just a food vlog of your house and being real about what y'all eat. I know there are channels out there where they are constantly trying new things and have a new dinner for 6 or 7 nights of the week and that just sounds exhausting to me! Plus I'm usually only cooking for one so to see someone include leftovers and snacky style meals, I love it!

Hi Rebecca, I was thinking about you and your channel. With the egg shortage, I thought perhaps you could do some baking recipes that do not require eggs. I also read online you can substitute the liquid from canned chick peas, or even replace apple sauce in some of those box cake /dessert recipes. Immediately i thought if anyone can be innovative and provide high quality and delicious food. Its you!

If you don't want to be at the mercy of the yogourt deals, figure out how to make your own. You can flavor it how you like (of course you may spend money on jam you aren't buying now...but you can make that also). Very easy in my Instant Pot but you can also use a crockpot overnight, too.

I tried a new recipe last weekend. I bought Dollar Tree Hungry Jack pancake mix. I also bought turkey bacon. Slice the turkey bacon into four slices. Make your pancake batter per the instructions on the box. Dip your uncooked bacon in the pancake batter and fry in the frying pan with butter. Warm Dollar Tree pancake syrup in the microwave and pour it on the pancakes. Delicious.

I'm with you on the chicken salad purist 😆. I would try what you made with the apple, onion, pecans, and cranberries it looks delicious!! I also cut my onions very tiny, if I don't used dried minced onion, it's a texture thing for me. I can't eat big chunks or even small chunks of onion raw, even tho I love the taste. I also grate onion for meat salads too. May God bless 💙💙

Pecans are great in chicken salad, apple and cranberries as well. Of course the soup works! This Italian (IBM) has no issue with your HH-style spaghetti. The canned tomatoes are a good deal! That's also a good price on Tilamook yogurts, also the hot dogs. $191 and change??? Is that all??? You got an amazing mass of groceries for that price. Thank you for a nice video.🎉
