We have green and dark gandules.....the dark ones are called gandules olorosos

In Ghana they sweeten it with pineapple fresh pineapple juice. The pineapples in Ghana are very sweet.

The original potato salad is made with eggs, peas, carrots , and onions. This is the Caribean side of Panama. The Spaniards side of Panama may add something else, but I haven't experienced that. I am old school, so maybe this new generation does stuff their way. So, just a bit of information from a Panamanian. 😊

I’m also a “pana” of West Indian (Jamaican) ancestry and that’s how I knew and prepare potato salad, minus the onions 😁 Saludos!
