I was 21 when I first visited Maxim's. Where fun and frolic beams! That was the saying. Just like La Grenouille and other classically French establishments, it was a dream of floral arrangements and delicious food. A little champagne gave the whole night a lovely glow.

That was impressive! That head waiter deserves the employee of the year for all of France award for his maquette of the dining room. What dedication! As for the chefs, they obviously take no shortcuts whatsoever. The dishes must be well worth every euro spent on them. This is probably as close as I'll get to Maxim's as I don't have a diamond bedecked woman to fly over there with me and enjoy the cuisine. I'll have to enjoy it vicariously over the youtube.

I took my family there probably 25 years ago and it was a very special restaurant. It was black tie for the patrons something not seen very often anymore

Sadly, this would be completely unacceptable today. Brown, brown and brown. Consumers today want bright colors and don't appreciate flavor.

A good chef stays as close as it is possible to natural flavours, natural colours and natural textures without additives in the form of artificial food flavours, artificial food colouring, added preservatives, overlooking and the like. Accompaniments like salads or fuit could be in different natural colours. Wines too.

This is epicurean European cuisine that does not douse the food with oil, spices and liquid. The natural flavours and natural colours of the food are retainedt to a maximum and this is how food should be prepared and presented. Minimalistic food at its best.

@@yakovisaacs6441 are we watching the same video, they keep saying only a little.....and then the plate is covered in sauce at the base? I can't tell much of the true color of the food as the video is older. I would rather have food that tastes good than is there only to be pretty. But the descriptions leave a lot to be desired in my absolutely amateur opinion of which means nothing because I am not a chef.....just a consumer. But I'm also going to give my opinion that without consumers paying their money, there wouldn't be establishments. Of course they must have been doing something right, to be open for so many years. But these remind me of the dishes produced during the Roux Scholarships, very unappealing. If the appearance of a dish is unappealing your body is naturally going to feel hesitant, perhaps its food that today is best eaten blindfolded or in one of those fancy blacked out restaurants where your sense of taste and smell would be heightened to be best enjoyed. The ingredients themselves appeal to me, but is quite bland looking. Are you french, or classically french trained? I've eaten in several fine dining french restaurants and I was not impressed, though these were more dishes meant to appease the eye, and were not high in flavor at all. Very, very bland. I shall say I guess french cuisine is just not at the top of my list, but I respect it and those who enjoy it.
