The oil comes from the coconut milk, that's what happen if you cook it for a long time. If you want less oil, better put the coconut milk as the last ingredient then cook it for about few minutes.

You should add onions and tomatoes, saute it with the bagoong then add the coconut milk, let it simmer before adding the meat. And use the thick cut pork belly, not the bacon cut. Happy cooking! 🥰
