Cooking Suggestions
1) Try to use Prime or Choice briskets whenever possible. Costco usually has a great selection.
2) Expect a cook time of 1 - 1.5 hours per lbs of brisket if cooking at low temps, (250-275F).
3) Adding a pan of water isn't necessary and doesn't make the brisket more moist but it's good for controlling temperature and for collecting drippings.
4) Texas brisket means you always cook fat side up but there is nothing wrong with cooking fat side down. It it totally your own preference and it doesn't really change the taste.
5) Digital thermometers are helpful and the one I use in this video is called the "Inkbird Bluetooth Meat Thermometer" and can be bought online for about 50 bucks.
6) Patience and temperature is the most important thing. Keep them both in check and you'll end up with a great brisket!
