I recently collaborated with Atlas Obscura www.atlasobscu... to visit the oldest cookbook in the West in the rare book library at New York Academy of Medicine. Today I'm going to attempt to make deep-fried honey fritters from its pages using honey from my hives. Let's travel back in time and make some honey fritters. I loved the collaboration, it was two of my favorite channels so, basically a dream team. Could you consider making ancient recipes more frequently? Maybe from non western regions too? Like another ocasional series? I know you've made stuff as old as the 19th century but still, it would be so interesting!

I've always been amused by how old recipes never use measurements. This includes old family recipes! I have an old cookbook from my great-great granny, and one recipe just says "mix until it feels right." How am I supposed to know what feels right if I've never made it before granny!!

Hahaha :) It really highlights how important the oral tradition has been for basically the entirety of human history. Mothers taught their daughters who taught their daughters...they never imagined we would try to make these things alone just from a written recipe.

decades ago we wrote down all our old family recipes to make a cookbook, the first draft of which involved a lot of volunteers following my Granny and all my great aunts around kitchens with notebooks shouting "no, wait, how much sugar was that!?"

The skill of the camera person is undeniable, but I’d just like to reassure Emmy that because the camerawork was not subtle, it felt less intimate, and I personally like the raw Emmy better. But, again, beautifully done for a one-off!

I like the overall style, but the shots from the side camera are irritating, because she's no longer talking to the viewer, but the viewer watches from the side how she's talking to someone else or too obviously to a camera or... in my case it's kinda like she's talking to the corner of my room. ;D

Hy Emily 😃 in south Italy we still have a similar sweet fried treat:it's called "struffoli", and people usually eat It at Christmas Time, or in the occasion of weddings or other happy family celebration. you can find It expecially in the area of Naples. No pepper on top, only Little colored candy. love, Chiara

Funny enough because of all the Napoletani that came to America most Italian Americans even if their family came from other regions know Struffoli even though in Italy most Italians that are not Campanian don’t know Struffoli. Comunque spero che ti trovi bene Chiara!

Great job! If you make this recipe again, try using longpepper instead of regular peppercorns. I do a spice demo at a living history event in Jamestown called Military Through the Ages. We represent Charlemagne's Army, 800 AD, and reference the Apicius for our cooking demo (using all historically accurate tools and an open fire!). The Romans used the same word to describe both types of pepper - "piper," and longpepper was primarily used before regular peppercorns trended into favor, then were pretty much used interchangably. While more expensive than peppercorns, it's worth the extra $$ as it has (in my personal opinion) a better depth of flavor and not quite the "bite" that peppercorns have. Always fun to try different ingredients!

I love blending honey with spice! One of my favorite things to add some zing to my fries is mixing honey with chipotle powder. That sweet & heat combo is something special. About the U.S. and the metric system: The entire U.S. Department of Metric Conversion is 2 guys. No, I'm not joking. Hey, could you please do a video on Korean hotteok? It would be fun to see what creative filling you think would go great inside these stuffed patties of pan-fried goodness.

I do like the new cinematics but I also like the homey personal touch of the old stuff. I feel this is Atlas Obscura's work. My favorite chicken from one of my favorite Chinese places is Honey Pepper Chicken. It's AMAZING so so yummy. Can't go wrong with the same combo on donuts.

She's already done beggar's chicken, but other Chinese chicken recipes include salt-baked chicken and soy sauce chicken. The first is a bit like beggar's chicken but with salt instead of clay. The second immerses the chicken in a mixture of soy sauces, sugar and spices. In both cases the non-chicken ingredients can be re-used, and actually get better with more flavour over time.

I live in a roman city in Spain. Every year at May we have a "fair" ( Tarraco viva) and we have roman showcooking and after a taste! Love ancient rome cooking was so good. Love

Oh my gosh, I was thinking of the exact same thing! We used to called them honey balls because we didn't know the proper name. We probably got them at that same place on the south side of Danforth near Pape Station?

TheSpiderdawn yes I would call them honey balls too in regular company :) yes I lived right in the Danforth. Athena Bakery i think. But I believe I know the place you are talking about , They had glass cases full of cheese pies and spinach pies (tyropita and spanakopita) ? Either way..all the Greek food on the danforth is so good!

Gypsy Heart Yes they seem like a relative of loukoumades/lokma, but it’s a completely different kind of dough. Lokma dough is a yeast-raised batter that gives much lighter result with a fluffier interior and crunchy crust because they often [trade secret 😅] add a little rice flour to the batter.

I agree, Emmy is one of the reasons i stopped watching mainstream TV cooking and informational shows. She makes us feel like we are friends sitting around the kitchen watching her do her magic, more person to person.

That is nice to be able to make those fritters and mix the honey with them to make the fritters like that you just made. I learned something by viewing this video and getting knowledge which I can use to make the honey myself and also be able to make the fritters as well.
