Cooking MOROCCAN TAGINE for My AMERICAN Mom, Morocco in America,المغرب, Maroc

Moracro cooks Moroccan tagine for his American family. The food of Morocco can be exotic to Americans, I hope to introduce more of my family to the Moroccan tajine. Today Moracro cooked a marinated chicken tajine, or tajine mchermel. The ingredients included Moroccan food flavor staples such as saffron, lemon, ras al hanout, cumin, ginger, and paprika. I bought my mom an Emile Henry tagine to practice some Moroccan recipes, as she likes cooking, usually in the pioneer woman style. We bring a little bohemian kitchen into the Moracro kitchen today as we are making tajine in America. I take the Moroccan cuisine skills and tastes I learned in Agadir and Taghazout and put them to the test here in Schaumburg Illinois.

One thing to be noted tho , never flip any vegetables or meat inside the tagine while cooking (unless the recipe says so wich is rare) , i think you should try making bastilla next , it could be hard to do in the US tho , maybe try Moroccan chiken in the oven

Be careful as Moroccan, we don't move chicken inside Tagine like that while it still cooked because it will be cooked with evaporation automatically..hhhhh...,and not destroyed chicken meet, and we cut potatoes in half or in 3 slices...olives makes the flavor more testy...As Moroccan living in Illinois....there is super market where to find all Moroccan stuffs in Chicago...names..Sahar Marcket..just ask them..they will help you to find all Moroccan recipes...tagines..beradd..couscous...and more......But you did good job when you cooked...Enjoy it....😊👍

For doing a good tagine the first thing cook it with low heat no matter the time it’s will takes second thing never touch or reverse the meat or the vegetables because the conical form of tagine help to cook the whole ingredients one of your followers in Morocco 🇲🇦 peace

Hi moracro great job with the tajin just a remark when cooking with a tajin keep it on low fire to prevent it from cracking and also no need to flip the meat. Tajin will cooks like a slow cooker. And it will be great if you tried it will a charcoal grill it will take some time to cook but it's totally worth trying.

My friend's info: When we buy a new tagine, it's better if it's made of clay. We put the outer crust of the vegetables, of course, and put them on the fire. Burn until the tagine turns black. We put water in it until the morning, then put Jax on it and clean it. Rubbing the clay after washing when you need it again adds an extra boost of flavor, too. Bsaha w raha
