Resepi :
Nasi Ayam :
2 cawan beras wangi (cuci)
3 ulas bawang putih (cincang)
2-3 sudu besar minyak dari lemak ayam
2 helai daun pandan (simpul)
2 2/3 cawan stok ayam
Ayam Hainan :
1/2 ekor (900g) ayam
1-2 sudu makan garam
air ( dlm 1600ml)
3 ulas bawang putih
1 inci halia
2 pokok daun bawang (separuh bahagian atas sahaja)
kaki ayam
semangkuk besar air ais
minyak bijan (sapu pada ayam sebelum dipotong untuk dimakan)
Sambal Cili :
2 - 3 ulas bawang putih
2cm halia
4 biji cili merah
5 biji cili api
1/4 cawan (60ml) stok ayam
1 sudu teh gula
1/2 - 1 biji jus limau nipis
tambah garam jika perlu
Sos Kicap :
1 sudu teh minyak bijan
2 sudu makan kicap cair
1/2 sudu makan kicap pekat manis
1/2 sudu makan kicap pekat masin
2 sudu teh stok ayam
1/2 sudu makan sos tiram

Chicken Rice :
2 cups fragrance rice (uncooked)
3 cloves garlic (minced)
2-3 tbsp oil rendered out from chicken's fat
2 pieces pandan leaves (tie knot)
2 2/3 cups chicken stock
Hainanese Chicken :
1/2 (900g) chicken
1-2 tbsp salt
water (1600ml)
3 cloves garlic
1 inch ginger
2 stalks scallion (upper half only)
chicken's feet
a big bowl of ice water
sesame oil ( rub on chicken skin before served)
Chilli Sauce :
2 - 3 cloves garlic
2cm ginger
4 red chillies
5 thai bird eye chillies
1/4 cup (60ml) chicken stock
1 tsp sugar
1/2 - 1 lime juice
add salt if needed
Soy Sauce :
1 tsp sesame oil
2 tbsp light soy sauce
1/2 tbsp sweet soy sauce
1/2 tbsp dark soy sauce
2 tsp chicken stock
1/2 tbsp oyster sauce
