Cooking Skate, the Fish - Chef Jason Bunin Cocoa Beach, Fl

This week I'm showing you how to make something you may have never thought of cooking, or even heard of, a Skate Wing. A skate is a fish, related to sharks but more resembles it's cousin, the stingray. It's meat is actually flaky and I've cooked it several different ways in the restaurant this week, but today I'm showing you how to panko fry it, along with an heirloom tomato stack with ratatouille vegetables. Looks great - in the U.K. around the Humberside area, pretty much every Fish & Chip Shop sells Skate as an option for your Fish and Chips. I personally prefer Haddock then Cod but Skate is definitely tasty and I love what you’ve done here.
