In Macedonia Bakeries are using curd (cottage cheese) instead of cheese. It`s much cheaper for them. But homemade burek is something else. We use full fat sheep cheese and homemade dough and we make it thin as a leaf. And for the burek with meat, the filling that we use is beef and pork 70-30 ratio with onions and spices. It’s not the traditional way with cheddar cheese and it tastes funny.They use “ Gjize” something that looks similar to crushed white cheese but it’s not. It’s comes from milk like cheese but it’s an entirely different process.

I think Burek in Kosovo is much better than Albania. In my opinion, Bosnians make the best Burek in the balkans. I am Albanian so no bias here.

@@Makedon9 I have tried byrek from all ballkan countries and Albania tasted the best from many shops. Of course your taste may be different but no one makes Byrek Me Gjize like in Albania. It’s a long tradition and they do it differently to others and they are Masters at it. Kosovo byrek is Super nice as well. Bosnia, Macedonia do a great job.

Molly, you did great. I am from Kosova and making a byrek isn’t easy. Byrek is also good with green onions and feta cheese, it’s a great combination and it takes less time to prepare the filling.

I leave in Bournemouth and I was in Albania last summer and I absolutely love burek. I have been trying to make it at home multiple times. But I never got to taste the same way as Albania unfortunately.lol

In cheese byrek you must use eggs, that's what holds it all together. Also important the temperature and time of cooking. Keep it at 180 C for at least 45 minutes, 20 minutes is not enough for the moisture to evaporate.

Next time you visit Albania stay at someone’s Grandma. She will teach you the best recipe’s and to make the best byrek in no time. Everything is how you do the very thin pastry with multiple layers.

I love food that I cooked but Balkan ? well I don't know Look delicious~ For western food I know simple one ,,~ potato sliced and green or red pafrica ( western chilly ? ) and milk all together in the oven for about 5 min means until milk is almost dried as 80 % i like to cook but not so good chef i think Moly is a nice chef i may try to follow Moly"s recipe when i come back my home ^^

Next time put 3 eggs with cottage cheese, mix and spread in fillo puff oiled b4 hand. Rollit and put it in baking pan and bake it in oven for 25-30 min. Cool down for 5 min. Enjoy. GREETINGS from Kosova.

It’s a different cheese what Albanians and Kosovars use They boil the yogurt ,..the yogurt brake while boiling,...they put it in some kind of clothing to get rid of the water ,..after one night of dripping,...the White thing left in the clothing is cheese and they make byrek You can’t find that cheese in UK ,..the best cheese in UK to make byrek is ( organic Greek feta cheese) only that cheese can give you the authentic taste of Albania or Kosovo Only thing you must break it with hand

Feta cheese, eggs,a bit of salt and a bit of cold water so it could mix together should have been enough lol. Salami and potatoes don't go into this mix.
