What didn't get mentioned is that Kvitnes Gård is so amazing that they took in the school and kindergarden in the village when it got closed due to mold. At the time of filming they had an entire school there as well, saving the heart of the village. They care profoundly about sustainability, animal wellfare, lives, sharing knowledge and the society around them. On top of caring about presenting you with the greatest food the region and Norway can provide.

I'm so proud of Halvar and the gang at Kvitnes Gård. I live in the village and have eaten there multiple times, and it is truly an experience like no other.

Interesting. How does that work? Were you born there or did you just decide to move to a remote arctic village like a fugitive? And what do you do there? Obviously you have internet. Do you do remote work or is there work to do there?

@@Pteromandias It's not as remote above the arctic circle as you imagine. Norway above the arctic circle is almost half the country length-wise, has hundreds of villages, a couple cities, manufacturing, industry, business, tourism. OP could be anything from a teacher, to a business person, to a fisher, and much more. Most people living here were raised here, some move to study, some move for the nature, or just to try something new.

I'm so happy with how successful your channel has become and I wish you nothing but growth. One thing I feel like I kind of miss are the recipes that are straight forward, could make it on a week day night and they teach you more efficient methods of cooking. Those are the videos that made me want to be a cook like you. No matter what though, I wish you nothing but success and happiness.

We raise quail and do smoked quail eggs -- the secret is to keep the temp at or below roughly 100c. If you get too hot above boiling temps, the eggs boil internally and explode. Nice clean low temp smoke for an hour or so and they turn out amazing. Also, wash the bloom off of the egg and the smoke permeates much better.

This was a great video. Very similar to what Kristen Kish did on “Restaurants at the End of the World”. That one was a little more extreme location wise, but very similar concept wise. I loved watching 2 chefs that I admire do beautiful food with limited resources.

Super cool video! The concept of that restaurant reminds me of that one movie I saw in Netflix about that restaurant on an island (were the restaurant was led by the chef who was a cult leader)

The Menu. You need to watch it again. They were not a cult, they were just tired of devoting their lives to serving people who didn't appreciate what they sacrificed to be there and make that food for them. They hated their patrons and themselves and had agreed that everyone there deserved to die, staff included.

Conditioner works amazing to get free diving suits on too! A lot more of a glide if you “pre-condition” it. Flip it inside out, soak it, then slip it on 😊😊 I gotchu papa! Beautiful waters ugh.
