From use-by to best before, 80% of Singaporeans are confused by the terms printed on their food labels. What do these labels mean? And what happens if the product is past its expiry date? A typical household in Singapore throws away an average of 19.6kg of expired food every year. But does all of it have to be thrown away?
Join our two kitchen amateurs, Kelvin and Ridhwan, as they go on a zero-waste journey to uncover when expired foods should actually be discarded.
With the guidance of Chef Isaac Henry, our boys will learn essential pantry management, how to decode printed labels, and even hacks on how to use expired foods in everyday cooking!
With hardly any cooking experience, how will Kelvin and Ridhwan fare in a zero waste cook-off against each other, using only expired goods?

About the show: Welcome to a kitchen where no food gets wasted, not even wilted greens, innards or fish scales. Newbies learn how to cook with what is often binned and then compete in a zero waste cook-off.

I am honestly very experienced in cooking expired food. Everything has been taught in this video and that is definitely the golden rule. I will always steer clear from keeping any food made from cooked flour that was kept at room temperature for some time... like cooked pasta... that is the dangerous kind that you shouldn't keep more than a day in the fridge.

This is such an amazing series; I especially love this episode. It's really informative, it's really funny (Isaac's facial expressions make it even better) and it's short enough for casual watching. Kudos to the Zero Waste Kitchen team. Please do many more of this! 👍👍👍

That day I got a chicken pastrami at 80% off because it is expiring the next day. So what I did was I put it in the freezer for 5 days until I decided to use them. So I just pan fry them lightly, let them cool and then use them in my salads.

This was helpful, but I am interested in what nutrients are maintained/lost and at what rates. I am guessing even if a food lost most of it's micronutrients, it would still have calories and macronutrients. Is that true?

Near expiry & expire food is different. I try to buy & use both of them , I can save a lot. Some food do much longer shelves life like dried food, can food & fermented food. Choose by experience for fresh food.

The expiry date is more of a marketing thing, than health. But... here in the Philippines even brand new meat, well within its date, may not pass the smell test. There is no concept of a cold chain here. That is why Filipinos tend to overcook all meats until super dry - to kill any bacteria that may be in it. Bummer, but such is life. 😎

When you have Chinese ancestry, nothing goes to waste, really... but very important is the smell, then if it looks it has discoloration, then throw them away. I won't even taste it 😅

Singapore food standard is lousy. Only shows bbd or exp. EU require production date in addition to bbd/exp. So the canned food you buy could be 10yrs old. Scary

it's true there was a couple of times I couldn't taste that my egg mayo bread or something has turned bad and I just continue eating till someone said that it's spoiled then I realised the slightly pungent taste LOL. Guess I was too hungry each time.

A lot of food are being thrown out and end up in the trash bin, even if it is still edible while the have nots are left starving .
@raykenley
@raykenley Жыл бұрын
There is a huge different between expired and best before date.Expired you need to trash it no matter what,unless you keep it in the fridge or freezer. For best before date,it will most likely eatable even it is over the date.You can even keep it in the freezer for another year.

I do not agree with using expired ingredients like this. I find this very misleading. It can lead to food poisoning! Zero waste kitchen --- as the name suggests, it should be a kitchen with no garbage, no plastic waste. It should be said that it is a kitchen without a trash can. . . But I saw the host tell his friends that if the food smells bad, just throw away , even the packaging bags ! ! ! Doesn't that create more garbage? In a zero-waste kitchen, all food waste and discarded parts are put directly into the compost bin. so that they can be converted into fertilizers that plants can absorb. . . (Instead of teaching people to eat food that is about to be damaged and rotten!)
