My grandmother was from Mexico and I remember her making a yucca flower dish with tomatoes and onions. I couldn't remember when she harvested the flower for the dish, but you answered my question. The flower gets bitter with time so it must be a tender early harvest. It's not spring yet so I can attempt to cook the early blooms when they come out and duplicate my grandma's dish. The first time I ate yucca blossoms, I nearly drove 50, 60 miles away to find yucca blossoms. By the time I got home and cooked the yucca I must say it was well worth the long trip! Such a delicacy!

Yucca blossoms yucky they taste horrible Raw I don't know how they taste cooked but I taste a whole flower off the tree it is so bitter it's horrible I could not get that taste off my tongue for nothing I don't see how he ate that whole flower I had one the tree is actually right across the street from my house and a Hispanic man comes by every time it blooms and he gets the whole Branch down and he gave me a whole one to eat and it tastes just like aloe vera plant very very bitter

My recipe is from northern Mexico, take 4c of flowers, adding 1 onion and 1 tomato- both chopped. Sautee in olive oil and add 4 cloves of garlic, cumin, salt, and pepper to taste. Then add 1/2c water. Once the water is 90% gone, ready to serve. So so good!!! I really enjoy how you educate and share your enthusiasm for the outdoors!

That is some HUGE yucca . I love yucca blooms sautéed in butter or dip them in egg and use flour or cornmeal . Yucca leaf cordage is just as strong as hemp and stronger than nettle or thistle cordage imo . The ultimate survival plant . I like that big knife and wondering who makes it . When I was young we had a family farm in South-Central Kentucky I spent my summers on. Grand Father milked about 15 Cows (by hand) as a supplement to the income (Twice a day milking got about 2 full milk cans, picked up next Morn.), in early spring the wild onions (which here is actually a type of wild Garlic), would be the first to start growing good, the Cows would get into them, and until the onions played themselves out you couldn't sell your milk for the premium price because of the strong Garlic flavor the milk had, it was then used for secondary milk products.

I can't believe am watching this for the first time. Where am from this type of yucca was introduced as an ornamental plant around 40 years ago and now are everywhere. We have a gigantic one in my garden that's around 7 meters high and I'll definitely try what you've shown us here when the lower branches flower.

Love the video Bob. Having recently moved permanently to New Mexico, Alamogordo, I found thousands of Yucca/Spanish Daggers around our land & very nearby mountain foothills. I have enjoyed the blossoms many times. Funny thing is, a few local contractors who were building my home saw me harvesting & enjoying the blossoms, thinking I was a crazy Yank. They claim they had never heard of eating the blossoms. I whipped up a big batch of them as you prepared along with some Chorizo. They loved it and still think I am a crazy Yank. Thanks for the info. These have become a regular spring vegetable favorite.

My grandmother used to make a dish out if the Yucca plant. I understand that the flower must be used while young otherwise it will be bitter. I hadn't seen too many recipes for this dish. I really like your video, thanks

The size of your Yucca is amazing. Here in NW Indiana, our yucca only get about 4 feet tall, and the stalks about 3/4" thick. I've known the flowers were edible, but didn't know the stalks were. I'll try some next season.

This video was in the thumbnails, and of course I had to watch...again, u gave a description of the flavor on the stalk, though each time u eat a slice, it has the sound of water chestnuts, I like them! No matter how many videos I watch (which all consist on learning about food, be it foraging for wild edibles/medicinal, benefits of herbs and their medicinal purposes and wild caught meats. When one has known hunger, one wants to know all the wild available foods + gardening, I’m working to have a perennial garden which keeps on giving, which ur well aware of, u have a big one! U once mentioned planting fig, how u want to introduce other food sources to ur land for ur generations to come, u r one smart young man, u have the best insurance of all...a food source that keeps on giving! I have a Yucca plant at work and I take it home every time I can... I'm Mexican and we cook it with eggs .. I didn't know you can bake the stems... I'm gonna do it this year for sure. Thanks Bob

Thanks for the information. I live in AZ and I have seen them for over 40+ years and never knew. I'll have to check this out next spring. It looks and sound really good.
