My mom is from Hawaii and she used to make anything “Hawaiian” By adding canned pineapple to it. In the 1970s pineapple was still very exotic and we never got it fresh in Wisconsin! We would bring back three pineapples on the plane when we went to Hawaii to visit relatives at Christmas! And that was like GOLD!

@@cooking_the_books They would put them in a cardboard container like a briefcase with a handle and you could just bring it on the plane and put it in the overhead!

Did you know pineapple is not native to Hawaii !! It’s a bromeliad and it’s native to central and south America. Hawaii was chosen to grow pineapples because of its isolation and also Hawaii doesn’t have humming birds so the pineapples are seedless . And Mr dole was one of the twelve oligarchs who Helped to overthrow the Hawaiian monarchy and annexed a kingdom and destroyed a whole race of Polynesian people. A lot of people associate pineapples with Hawaiians and Hawaii but it has nothing to do with Polynesia and Polynesians it’s an American created fake post card image of what they think Hawaii should be . To Native Hawaiians that fruit represents the end of native Hawaiians and their beautiful kingdom . Just putting some facts out there for people who Don’t know …. Aloha :)

My grandmother, aunties and mom all worked in the Del Monte cannery before and during WWII. I’m looking forward to trying this recipe with my overripe banana in their memory. Thanks for sharing! ❤

When I was about 13, there was an Amish cookbook at our pharmacy that I REALLY wanted. I didn’t have enough money for it at the time, and when I did, it was sold out. It has always been the cookbook that got away and I’ve never escaped the un-buyer’s remorse. BUT! The one recipe I remember from flipping through the pages the day I decided I wanted to buy it has to do with bananas! Bread Soup! You tear up some bread into a bowl, add in smashed ripe banana, add some cream, half and half, or milk to your liking, add brown sugar and salt to taste, and smash the whole thing up. It’s like a soupy bread pudding. Lol. It sounds so weird, but I loved it! And you don’t have to turn on the oven-you eat it cold. Summer win!

Hello Anna! Another use for a ripe banana is to make banana pancakes. If you haven't tried it before, an interesting recipe is with one mashed banana and one egg. Mix well, and make into small pancakes. They are good this way, and an interesting recipe to try with just two ingredients. To make the batter slightly more hearty (and a tad easier to flip the pancakes), you can add a spoonful of quick-cooking oats, or a spoonful of pancake mix if you have it on hand. It does not need additional sugar. I like to add about a 1/4 teaspoon almond extract. If you have any friends or family members who need to eat gluten-free, the banana/egg pancakes fit the bill. My retired teacher neighbor used to send her late husband to our door on Christmas morning every year with “Hawaiian Loaf” and I bet this is the same recipe. It was delicious. I am definitely going to have to try this one. 🍍🍌🥥

I sent my daughter a link to this recipe, and she told me that she literally made a version of this last week. I asked if she used this recipe, and she replied that it was a "use it up" recipe out of her head. Anyway, she made French Toast with what was left after they ate it from the oven. Her 15 year-old loved it. I am not a baker, and perhaps I am late to the party, but I thought it clever to use of left over quick breads to make French Toast, and I thought I would share.

one of my favorite ways to use up bananas is to make a little banana cake in the microwave. mash a banana with 2 eggs, add a little bit of a saturated fat (tablespoon of butter, coconut oil, etc..) add a tablespoon of any sort of flour, I use gluten free (I've also just left it out when I didn't have any). you can add a tiny bit of baking powder, but not required. I add a little cream of tarter instead. add in some cinnamon if you like. mix it all together (I just use a fork because I'm lazy) and dump it into a microwaveable bowl with high sides, or a wide dish, for like 6 minutes and then let it cool. I usually drizzle some maple syrup over it before eating. it always works out. if you used too much baking soda or powder it could taste salty, that's the only way I've goofed it up.

YES! I just made a banana bread on my channel too, I think the addition of the pineapple is just genius! I one hundred percent agree with you when you say people always have an overripe banana laying around, and banana bread is the perfect way to use them! This was awesome! 😋

I've learned that mashed bananas will more or less work as a one-to-one substitute in any recipe that calls for baking with pumpkin puree, and there seem to be a lot more pumpkin recipes out there then banana ones. Using mashed bananas in my no churn ice cream is also a favorite.

I made this today. I can't taste any pineapple, but it's a more pronounced banana flavor than I had anticipated. It's super buttery, too. I'd make it again, but maybe try to get more pineapple flavor somehow.

Yes it is so buttery!! I'd say the pineapple adds a textural element that I enjoy. Maybe a little drop of pineapple extract?

I made this yesterday (well, last night, its way too hot to bake during the day here) and its SO good. I only had sweetened shredded coconut so only used about a 1/3 cup of brown sugar. I used a 1/4 quarter cup of butter and way more banana. I also made a little glaze using some of the canned pineapple juice. I will definitely be making this again, thank you for making this video! 💗

I use them for Banana Pancakes. Also i throw them right into the freezer with skin on. Pull them out 40 mins prior to cooking with them, but put them in a bowl because they sweat. Then peel when thawed.

Duncan Hines makes an orange cake mix. It's really good - especially when you put a vanilla glaze on it. Creamsicle Cake!

You do have to search for DH orange cake mix out. Some of the grocery stores where I live have it, others don't. I often find it on the bottom shelf. I hope this is not an omen of a vanishing act.

Sounds odd, but I'll mash up overripe banana with a bit of peanut butter, honey, and cinnamon and just eat it like that out of a bowl as a dessert to use up bananas. This looks delicious! I add pineapple to zucchini bread, but I've never had it in banana bread, I'll have to try it!

Feeling inspired and a bit nostalgic as I grew up in a big family during the 70's. Interesting I had never used pineapple and coconut when baking banana bread! So I wanted to try this recipe. I added only 1/2 the sugar and sub coconut oil for butter. It does not need any more spice the flavors are perfect together. I also, added crushed almonds and coconut to the top before baking to add yumminess. I toasted the almonds and coconut first. I served it with fresh whipped cream on the side. I would recommend a few fresh strawberries on the serving plate. I love your enthusiasm!

Banana waffles is my go to for those over ripe bananas. I do a triple batch and freeze the waffles for a quick breakfast. Season the waffle batter with cinnamon, cloves, cardamom, nutmeg and allspice. They are delicious. The key to crispy waffles is to use cornstarch in the batter and bake them in a vintage 70's Oster waffle maker. Take waffles out of freezer and place in a toaster oven for a few minutes and top with some homemade preserves or some apple or pumpkin butter.

Oh what a fun cookbook!! Pineapple is definitely one of my top 3 favorite fruits. Believe it or not, one of my first jobs was working at Sunsweet prune factory!! Yes binder cookbooks are awesome. Del Monte had tuna???? Crazy!! I think this bread turned out delicious looking! A taste of the tropics!

I love Hawaiian Banana Bread. I love any cake that's made with a mix of fruit and nuts really, but this load definitely falls into that category.

I do a carrot-coconut-pineapple cake that just cannot be beat~! Maybe next time I will add a banana to it. I bet you were supposed to drain those pineapples and that is why it took longer [or partially drain them]. That does look terrific and I loved those 'caramelized edges' on everything, lol. btw, I am sure as a baker you realize this but you can easily chop up chunks or slices of pineapple for crushed ~ less stress driving around store to store. Thanks for this idea. Will definitely make~!!

I've seen tons of cookbooks, but have never seen that Del Monte cookbook. That's really cool. I like that this recipe that calls for less bananas than other recipes. I love banana bread but I like a milder flavor. Your bread turned out amazing! P.S. I love that your nails matched the cookbook!

Note that when you have "too ripe" bananas in the kitchen. Put them whole with the peel on in your freezer. When you want to make banana bread, muffins, pancakes or a smoothie just break off the stem if any, microwave til mostly thawed, remove the peel and proceed. I have never made a banana bread without using these frozen bananas. Extra "juicy" they make a super moist bread. P.S. my favorite additions to banana bread are mini chocolate chips and drained chopped maraschino cherries. Choco-cherry Banana bread. Delicious.

Ohhhh I'm so very going to make this! But I'm absolutely going to add a dash of almond extract and no one can stop me. May try it with a more fresh-ish (frozen grated maybe?) kind of coconut. I love coconut so much but the dried stuff.. not so much. Can't wait!

Everyone must have bananas on their brain this week. This is like my 20th video I have watched this week on some kind of banana bread. I made a lowfat banana cake this last weekend because I was craving some kind of banana something. When I think of Del Monte I always think of bananas, but I mostly think of pineapples. Probably because when we went to Hawaii we drove past their pineapple farm.

I've been making banana bread baked oatmeal with extra ripe bananas over the past year or so. But, you can google banana baked oatmeal and come up with a bunch of recipes. Also, you can make dog treats with banana. 🐶 😋 🍌 And I've seen recipes for banana pancakes 🥞

Getting rid of overripe bananas: Give banana pancakes with crispy bacon and maple syrup a try. I like to mash the bananas and stir them into the pancake batter 2 1/3 cup flour 2 tsp baking powder 4 tbsp light brown sugar 2 - 3 ripe bananas (2 large or 3 medium) 3 large eggs 3 ½ tbsp soft butter Salt 1 cup milk bacon ghee maple syrup Warm oven to 150 degrees. Heat large frying pan, add ghee and put bacon in until crisp. Put on plate with napkin to absorb excess grease. Keep warm in oven. In a bowl, mix the flour, baking powder and sugar with a pinch of salt. Make a well in the centre and add the mashed banana, eggs, butter and milk. Whisk to a smooth batter without any flour lumps. Put baked pancakes in oven to keep warm.

I love the binder cookbooks! Never heard of del monte tuna My daughter loves individual prunes as well Dave would love this bread! He loves pineapples and coconut . A couple of my mixers did the same This look great I need to make it

1. This recipes seems to share quite a bit of it’s dna with hummingbird cake. 2. The cookbook, from the recipe layout, font choices, and binder features looks like it might have been farmed out to Meredith Corp. (Better Homes & Gardens) for production. I don’t know if they had a dedicated Special Interest Publications group in the early 70s, but I wouldn’t be surprised if they did.

I had to buy the Duncan Hines orange cake mix in a lot of 2 from Amazon, so I stocked up on them and bought 4 boxes. Really good. Edit to add sometimes a frozen banana dipped in melted chocolate is so delicious. Good even without the chocolate.

Good call! I know some folks were having trouble finding that particular cake mix. I couldn't find it while we were living in California, but a few of my stores in Ohio carry it. Maybe it's a regional thing!

@@cooking_the_books I worked part time in a grocery store for 10 years, and here in Central Missouri, we carried the Duncan Hines Orange Supreme cake mix all the time.

Their orange cake mix makes a good version of the cake mix cookies, the chocolate chip ones.

That book is just too great!! You're absolutely right... there's something about it being a binder that just makes it feel extra special and important. The pockets in the tabbed pages and that super 70s artwork... all too amazing. To me it makes sense they'd have tuna. Tuna's the fruit of the sea, right? Or is it chicken that's the fruit of the tuna? I'm getting it confused. Anyway, this recipe turned out shockingly good! No spices, no nothing but pure fruit power... so delightful! I'll have to give this one a whirl the next time my bananas are looking rough. By the way, did you use Del Monte bananas??

Unfortunately no actual Del Monte products were used in the making of this recipe. I'M A FRAUD! 😂 Seriously though, I could not find any Del Monte branded ingredients for this recipe. It's very mysterious, because their US corporate headquarters is located pretty close to where I live!

If you have a prune party, hopefully you’ll have more then one bathroom! Lol! I, too associate Del Monte products as canned fruits and vegetables, and I believe I remember they made ketchup. The Aloha loaf sounds good, almost a pina coloda! Sorry, I tend to make the same thing you do with over ripe bananas, cakes, muffins and smoothies. Maybe, use it in a pina colada recipe as well. Might be good together.

Obsessed with this pyrex Cinderella boel pattern -- what is it?! Also, the binder was the best cookbook invention - lays flat, little pockets! I use the internet for learning, i use vintage cookbooks for actually cooking.

I order Delmonte gold pineapple rings from amazon, I just buy a case of 12. I can crush them or cut them into chunks if I need. Delmonte Gold is by FAR the best tasting pineapple out there. Really sweet and flavorful. Dole is just flat out sour. They pick it too green.
