This is wonderful. Somehow we over did our bread purchases for Thanksgiving. Everyone brought loaves upon loaves of bread. Very grateful, and now I have a new repertoire of bread dishes. Thank you ever so much.

Hello Marta ! I have a dish where stale bread, eggs cheese,milk and spices are combined to make a Swiss dish called Ramquin ! First, slice your bread Second , combine 1 egg; 1cup of milk, pinch of salt,white pepper,and nutmeg in a bowl and mix. Third, slice cheese, Emmataler, Guyere, Allegauer Swiss and set aside.Butter a casserole dish. Four, put bread and cheese slices I casserole dish. Then pour egg milk mixture over slices and put in a preheated 350 Fahrenhet oven for 30 min. Take out of the oven and sprinkle a little paprika, white pepper on top. Serve with mixed salad. Guten Appétit !

So many yummy recipes, there is never enough stale bread :). My mom used to make "stale" bread from fresh bread, using metal baking sheets.

my mom makes a dish since the sixties, i think her mom also made it. heat two cans of stewed tomatoes and chucks of stale white bread. I love this side dish so much. these tomatoes have pickeling spices and celery in them. they taste a bit different than just plain crushed tomatoes in a can.

These are great stale bread recipes. What I do is put any bread I may have in the freezer right before it goes stale. I then pull it out and make toast out of it.

Hey Marta. Welcome back. I love bread and butter pudding (slightly different method; and with raisins/sultanas. Stale bread is also useful mixed with parsley, sage and thyme and onion and used as stuffing for chicken or turkey A messy kitchen is normal - there's no point to spending hours cooking if the kitchen looks like it wasn't used 😃😃

Evening Marta. I've had both types of dumplings and love the ones with lardons and of course the Frikadellan. My mum used to make a bread pudding that was very dense and heavy, it had raisins and was very "feucht". It was a strange shape, quite tall and round with a funnel down the middle. That doesn't make much sense but I can picture it in my mind. The other main use for stale bread was in Falsche Hase, false hare? Though Oma always told us it was "Gehaktes Hund".

This bread pudding sounds very interesting;) From what I know the bread buddings are different in the Northern Germany, so that could be speciality from there, as you are from Hamburg. And you are right about Falsche Hase :) I could have mentioned it!

this would be soooo good with different fruits! like canned peaches or fresh strawberries. is this ok? canned cherries should good too but not everyone in my family likes them.

Oh yes, you are right! We also use it as stuffing, especially during Christmas time for duck or goose!

@@cooking-the-world I have wondered if our tradituonal bread stuffig had a German, Anglo, or more general heritage. The Pennsylvanians will mix the same poultry stuffing with mashd potatoes and call it "potato stuffing". It is served like mashed potatoes with gravy and pork chops or something. I like it!

Audio level is very low, the introduction and ending are quiet but the actual preparation & cooking section is almost inaudible, I had to use the captions to follow most of what was going on.
