i used water to fry up onions & spices PLUS used soy milk instead of canned coconut milk ~ cos i avoid saturated fat. Everything else i did just as u did, and this recipe came out FANTASTIC! Definitely going to give this one a try. Note: sweet potato chunks can start to turn brown fairly quickly if left exposed to the air; I've found that covering them in water with just a little bit of lemon juice or vinegar util they're ready to be used preserves their color nicely. Also, if you want a little more texture in the curry, you can use green lentils and cook it just a little longer.

Thanks Terri . I just quickly blanched a bunch of sweet potato leaves to add to my scrambled eggs . The leaves are not bitter like spinach and kale etc and nutritional fat superior to spinach in many’s best of health everybody

Yes they’re good, I grow sweet potatoes and I often grab some leaves to put in other dishes. Why not, it’s basically free greens!
