Ingredients:
-3 pounds of pork shoulder, sliced 1/2 in slices.
-3 tbsp Achiote paste
-2 tbsp chili powder.
-1 tbsp garlic powder.
-1 tbsp dried Oregano.
-1 tbsp salt.
-1 tbsp pepper.
-1 tbsp cumin.
-1 cup pineapple juice.
-1 juiced lime. (or 1/2 cup white vinegar)
Prep:
-Mix together all ingredients (except for pork).
-In a gallon ziplock bag, add the sliced pork, cover with marinade, close bag and mix to coat the pork.
-Add bag to the fridge for 2-3 hours.
-Slice cleaned and skinned pineapple. 2 one inch slices and 3-4 1/4 inch slices.
-Using skewers, stack the large pineapple slice first and add the pork slices. Alternating 2-3 slices of pork with one slice of pineapple. Finish by capping with the 2nd large pineapple slice.
-Add pellets to WFG, set to Smoker setting, 350F (176C) temp.
-Place the pork on the grill plate and smoke until the internal temp reached at least 145F (63C).
-Rotate the pork every 20 mins or so, this will help make an even cook and char.
-Remove the WFG, let rest. Then slice off the skewer for tacos.
-Enjoy!
