Great video Will! Love how you use all the parts of fish that most just throw away. That was 1 awesome looking gyro (pronounced e-roe), so fresh. As someone with the last name Derby, pronounced ‘Darby’ from English heritage, I take extra care to try to pronounce things the way they are meant to by the origin, Greek in this case. Which is not even close to a middle eastern shawarma, in my opinion. Thanks for sharing!!!

Another nice cook of one my fav foods. I make Souvlaki/Pita w-tzatziki quite often and you did the gyro justice. I used to say Gi-Roh most of my life, but, Greeks will tell you it's should be Ghee-roh. For a Turk and in Britain/Australia its a doner kebob :)

It’s pronounced and spelled Yeero, it means turn. Being Greek I always got a kick out of the misspelling and mispronouncing it Gyro. Either way yours looks amazing.
