Great video Will! Love how you use all the parts of fish that most just throw away. That was 1 awesome looking gyro (pronounced e-roe), so fresh. As someone with the last name Derby, pronounced ‘Darby’ from English heritage, I take extra care to try to pronounce things the way they are meant to by the origin, Greek in this case. Which is not even close to a middle eastern shawarma, in my opinion. Thanks for sharing!!!

My best friend is Greek and he would be ashamed if i didnt say yiro it’s crazy i actually ate one today but lamb instead of grouper which i would love to try !

Another nice cook of one my fav foods. I make Souvlaki/Pita w-tzatziki quite often and you did the gyro justice. I used to say Gi-Roh most of my life, but, Greeks will tell you it's should be Ghee-roh. For a Turk and in Britain/Australia its a doner kebob :)

It’s pronounced and spelled Yeero, it means turn. Being Greek I always got a kick out of the misspelling and mispronouncing it Gyro. Either way yours looks amazing.

I had to laugh, the motto in my family line is "Keep it shiney" because few men have hair on their scalps, lol. You look awesome Will, and tonight's recipes give us a lead in to so many more recipes! When I lived in New England (RI) I said Ji Ro, moved to ATX 1992 switched to Geero, and have heard pronounced Hero seldomly. Jagwar or JagWire!!

Ok clams ribs looked great and sure they tasted even better but please tell me you snatched up those grouper throats. I smoke the theoats. Pull it make a sweet and spicy homemade hawwian bbq sauce . Throw it on a Hawwian sweet roll with some sliced cabbage with the bbq sauce, and it is on like donkey kong.

It's gyro as in gyroscope. Because it comes from a spinning piece of meat that's spinning like a gyroscope.

My sister in-law is 100% Greek and when we went to Greece for her and my brothers wedding I’m pretty sure they usually say it as if the “G” is silent so “yro”.
