I would cook my bacon in a separate pan because I save my bacon grease it's good for cooking eggs and saute veggies like string beans sweet peas cabbage I would've buttered and toasted the buns. I always keep and clean any glass jars with a screw on top and pour my discard grease in once it's full i throw it away I also keep my bacon grease in one you can store it in the fridge or pantry it will keep for a long time

As a person that worked the Grill at Wendy's, since he mentioned that.... There was no seasoning on the Burgers other than Salt! I worked the Grill (sucked when they took me off of it and made me work the register cause I was never short... back in the late 90's) But when I worked the Grill it was so much fun... We had one of the Busiest Wendy's in the Whole Country! Anyways, I just wanted to say this is a great Video but He is a little wrong about Wendy's Burgers. They were Fresh Square Patties, No Seasoning in the meat that I know of, and I would put them on a flat top, wait till the blood started forming on top, turn them over and smash them with a spatula. The only Seasoning was Salt. I'd Salt Both Sides. Then when cooked, straight to the Bun an made fresh based on what people wanted on the Burger. Jr. Burger or Dave's Single or Double! Bacon was put in a Bun Warmer, Cooker, on Sheets! Grilled Chicken had it's on space on the Grill (Usually a Separate Grill) an a Timer for 6-7 minutes with weights on top, then flipped! The Chicken was always frozen! Not the BEEF!

Doug, I noticed you closed your lid a couple times. I'm still learning with my Blackstone 22". I made burgers a couple nights ago and when I closed the lid, it left a layer of grease on it. Do you have the same issue? The main concern is the seams between the frame and glass trap the grease and wash water when I tried to clean it. There are screws that look like you can take out to remove the glass, but that's a pain in the nether region. Any advice on this? What has your experience been? Thanks for any advice you can share.

Nice video. However, that electric griddle combined with your technique is more steaming those burgers than searing them. But, I think with any 120v griddle or technique the end result is the same. I see your crust only develops late in the process, therefore the inside is very well done before you can achieve this. Again, not really your fault as is is more so the limitation of 120v equipment. I think for indoor purposes, I could use my high-end Bosch induction range and a cast iron skillet. I'd be limited to 2 burgers in that setup and not that other stuff you cooked. Like this, I have enough cooking power to sear from start to finish. However, my kitchen would be full of grease and smoke! This type of cooking is really best for outside using propane as the fuel.
