@@cookingwithkurt Have you tested the buttercream using French and Swiss meringue? Or the Italian meringue is most stable of the three?

Italian meringue buttercream is the most stable of the three, so it's ideal for piping flowers. But Swiss meringue would work for roses also. French buttercream might be too soft (also French buttercream is automatically yellow from the egg yolks, so coloring would be affected). Hope this helps! :)

I have only made Swiss meringue, without butter, as a lemon cheesecake "decoration" which I do freestyle because I do not have a pastry bag and tips. Hello - yes, you can make the Italian buttercream in advance and store it in the fridge. Let it come to room temperature and re-whip it to make it fluffy again before piping. Hope this helps! 😊
