This is exactly what I was looking for. I love restaurant egg drop soup that has wispy shreds and translucent sheets of egg. The secret is adding the cornstarch to the broth and letting it thicken and heat, BEFORE adding the egg, letting it sink, then gently stir. My mistake was adding cornstarch slurry after the egg. It clouded the broth and the eggs were scrambled lumpy bits. I could never figure out why. Now I know the proper technique! The green onion slicing skills were nice touch. TY TY TY!

If you plant the white bulbs of the onions, they will take root and you will have a constant supply of green onions. I grow them outside in a planter. They are so flavorful when home grown. The green onions just keep on coming back over and over again.

best to plant those in different months, so that you can constantly get fresh green onions. Though this does same money but you'll eventually need to buy more green onions later on in the year.

The knife technique on the green onion was beyond informative. I have never seen this. Thank you. I love the detail of taking your dish to the next level in presentation besides the taste...tho, I do need at least a good amount of white pepper in the slurry. Just made this and it was fantastic. The won tons are something you must make along with the soup.

Thank you for the sesame oil comment. I rate take-out restaurants by there fried rice and egg drop broth. I didn't know it was the sesame oil that gave it the rounded flavor I so love.

KZbin sent me to this channel and I was so angry at first while Kyo went into a diatribe about all the people he wanted to thank! I was almost tempted to thumbs down! It was like going to an award ceremony to hear a person thank everyone and you don't even know if the recipe is any good! Thanks to all participants should have been saved for the end! But I have to admit it is a very good recipe even though some of the cooking techniques weren't Asian as I've come to understand and an added bonus to Kyo for giving the wonton recipe that other Egg drop soup channel recipes OMIT!

Great! I have the ingredients and will make this tomorrow! I am trying to lose weight though so won't fry the chicken breast, I will boil it in the chicken stock instead, and I won't add the sesame oil at the end. Hope my version will taste as good as yours looks! Thank you from the UK!

Awesome! Boiling the chicken is a great idea to cut down the calories, using only egg whites as would also cut down the fat content. I highly recommend adding a very small amount of sesame oil at least though. Even a half the amount of what I use will pack a punch and take the flavor to another level. The only thing I would add is that when you heat the water, put in a couple of chunks of ginger and some white parts of a couple of scallions and boil for a few minutes before and then pull out before you add the bouilion cubes. It gives a more arromatic flavor to the chicken stock base. Also, I prefer "Better than Bouillon" instead of the Knorr cubes. I've done this recipe with both. And I add silken tofu cubes instead of chicken.

Vegetarian egg drop you can use baked tofu squares; for the broth they have vegetable bouillon squares.

Love your knife skills! I'm definitely going to be trying that technique with green onions from now on. They look so much better that way. I'll do your soup, and I thank you for the recipe, but omg, I'm not doing that anemic looking white meat 🤣. I get it, I used to be a white meat only person before I realized the dark was where all the flavor was.

I like the explanation in your video and your green onion chopping. I don't know why it would be so much healthier than a restaurant version. It's always nice to make your own and have it fresh of course. But nutritionally, I'm guessing the restaurant makes it in a very similar way. I'm making mine with my homemade chicken broth which has a little ginger and has the benefit of bones simmered for a long time, so I think that would be a bit healthier. Good restaurants might even use their own broth too (though some might prefer the bouillon flavour, especially the take out restaurants you are thinking of). I put msg in because I wasn't using the bouillon.

Tapioca won’t gel in the fridge as bad as corn starch.

Looks good, but wonder if there is salt in the bouillon cubes or sesame oil, or any spicy hot flavor. Both of which, I prefer to do without.

No spice, and no salt in the sesame oil, but yes there is salt in the bouillon.
