Ultimate Fish Pie | How to Make Fried Fish | Trini Fish Choka

Growing up my dad was a fisherman and he brought home the best catch of the day and the most colossal shrimp I've ever seen to date. Nowadays it is difficult to source fresh fish where I live and crave the seafood of my childhood. This pie was inspired by the pie he and my mom brought home on Saturday mornings from the Bay where he sold their catch.
I have not seen any pies like this on You Tube so thought I would share my version with you. Hope you enjoy it as much as I do.

To wash and season fish
2 lbs fish or small whole fish, (king fish, carite, red snapper, croaker, catfish, cutlass)
4-6 tbs green seasoning, or to taste
1 ½ tsp salt and black pepper
To fry
2-3 cups of oil, for frying
To Knead Dough
3 cups unbleached all-purpose flour
1 tbs baking powder
1 tsp Himalayan salt
1 tbs brown sugar, optional
About 1 cup plus 1 tbs lukewarm water
2 tbs butter or oil
To Make Fish Filling
2 pounds fried fish
Onion, chopped
Chopped scallion or bandhania(culantro)
2-4 tbs green seasoning
Hot pepper, chopped
Salt and pepper

The green Cilantro salsa is called Chatni in HIndi. Trinidad is famous for Fusion of Indian and African culture, their Hindi inspired music is also called Chatni Music. Choka word from HIndi means delicious.

Growing up here in south my moms use to make it with sardines. She used ketchup, mustard and all those seasonings you just used with a little cornflakes to give it some body.

I love fish pie, looks so delicious. I made fry bake some time ago and added some left over promasa corn flour to the dough. It gave the fry bake a really nice texture. I am going to do same for the dough when I try your fish pie recipe. Next time do a roast pepper choka.
